Classification Dairy Manufacturing > Dairy Product Safety and Risk Management Available grade Achieved Explanatory notes 1 Work must be carried out in accordance with organisational requirements, licensing requirements, legislative requirements, and industrial awards and agreements. 2 Workplace information can include Standard Operating Procedures (SOPs), specifications, production schedules and Material Safety Data Sheets. 3 Responsibility for monitoring quality relates to the candidate’s immediate work responsibilities. 4 Quality standards as typically described in specifications such as raw materials, packaging and final product specifications and work procedures. 5 Definitions Control points refer to those key points in a work process which must be monitored and controlled. This includes food safety (critical), quality and regulatory control points as well as inspection points. Routine inspections refer to visual inspections. Organisational requirements refer to instructions to staff on policy and procedures which are documented in memo or manual format and are available in the workplace. These requirements include but are not limited to – site specific requirements, and company quality management requirements. Legislative and regulatory requirements applicable to this unit standard may include: Hazardous Substances and New Organisms Act 1996, Animal Products Act 1999, Animal Products (Dairy) Regulations 2005, relevant Dairy Specifications/Notices. 6 Reporting and recording systems may be manual, electronic or screen-based. Evidence requirements 1.1 Control points are monitored to confirm quality of service or output in accordance with legislative and organisational requirements. Outcome 2 Conduct routine inspections. Evidence requirements 2.1 Materials, equipment and outputs are inspected in accordance with organisational requirements. 2.2 Variation or common faults are identified and actioned in accordance with organisational requirements. 2.3 Inspection results are recorded in accordance with organisational requirements. Outcome 3 Demonstrate knowledge of quality assurance requirements relating to own work. Evidence requirements 3.1 The quality policy, procedures and responsibilities are identified in terms of their relationship to own work. 3.2 Quality assurance personnel are identified in terms of their respective responsibilities. Range quality assurance personnel may include but are not limited to – internal personnel, external auditors. 3.3 The requirements of internal and external customers are identified in terms of their relationship to own work. 3.4 The quality requirements and sources of advice are identified in terms of their relationship to own work. Range quality requirements may include but are not limited to – control points; monitoring procedures; regulatory requirements; process and operating parameters; procedures for removing and isolating and reporting non-conformances; reporting and recording systems.
