Explanatory notes
1
Organisational requirements include instructions to staff on policy and procedures
which are documented in memo and/or manual format and are available in the
workplace. These requirements include but are not limited to – site specific
requirements, company quality management requirements, and legislative
requirements.

Legislative requirements in this unit standard include but are not limited to
compliance with the Resource Management Act 1991, Animal Products (Dairy)
Regulations 2005, local body regulations, relevant codes of practice, and subsequent
amendments.

Evidence requirements
1.1
Materials are confirmed and available to meet production and regulatory
requirements.

Outcome 2
Carry out the fermentation process in the dairy industry.
Evidence requirements
2.1
The fermentation process is started up according to organisational
specifications and procedures.
2.2
Control points are monitored to confirm that performance is maintained within
the given specification.
2.3
Equipment is monitored to confirm operating condition and requirements are
met.
2.4
Fermentation meets given specification.
2.5
Stock flow to and from fermentation process is maintained to required
production requirements.
2.6
Out-of-specification product, process and equipment performance is identified,
rectified and reported according to organisational procedures.
Outcome 3
Shut down the fermentation process in the dairy industry.
Evidence requirements
3.1
Fermentation process is shut down according to organisational procedures.
3.2
Waste is collected, treated and disposed of or recycled according to
organisational waste management procedures and regulatory requirements.
Outcome 4
Record information for fermentation processes in the dairy industry.
Evidence requirements
4.1
Documentation is completed in accordance with organisational requirements.
