Range Salmonella, Listeria, Staphylococcus aureus, Esherichia coli, Bacillus cereus, Campylobacter, Clostridium, Yersinia. Evidence requirements 1.1 The conditions for growth are identified Range 1.2 The description identifies the health effects on humans. Range 1.3 environment, nutrients, pH, temperature, oxygen, moisture. fatal, non- fatal, age groups. The economic effects of product contamination are described Range levels 1 to 4 as defined by NZCP 5. Outcome 2 Outline the principles of a pathogen management system for a dairy industry site. Range entry criteria, ancillary services, personal hygiene, maintenance, raw materials, packaging, internal and external environment. Evidence requirements 2.1 A pathogen management checklist is developed for a given area in accordance with the Dairy Industry Pathogen Management Checklist. Outcome 3 Document a traceback action plan following the notification of a positive Level 3 in the individual’s workplace.
