Classification Hospitality > Food Services Available grade Achieved Explanatory notes 1 Legislation and regulations to be complied with include but are not limited to – the Health and Safety in Employment Act 1992, Biosecurity Act 1993, Health Act 1956, Food Hygiene Regulations 1974. 2 In this unit standard the term ‘food safety system’ means those procedures and practices that relate to the safe preparation and handling of food. They include legislative and enterprise requirements and the recommendations of manufacturers and suppliers. 3 In this unit standard the term ‘enterprise requirements’ means the policy and practice requirements of the catering company. Outcomes and evidence requirements Outcome 1 Assemble an airline meal using an assembly line system. Range Y class, J class; hot, salad. Evidence requirements 1.1 Assembly ensure that portions conform to checklist. 1.2 Assembly ensures that presentation conforms to pre-format photograph. 1.3 Assembly ensures that food handling conforms to food safety system requirements.
