People credited with this unit standard are able to prepare raw ingredients for quick service food products. Classification Hospitality > Cookery Available grade Achieved Explanatory notes 1 Legislation and regulations to be complied with include but are not limited to – Food Hygiene Regulations 1974, Food (Safety) Regulations 2002, Food Act 1981, and Health and Safety in Employment Act 1992. 2 Definitions Establishment requirements – any policy, standard operating procedure, or agreed requirement that is made known to the candidate prior to assessment against this unit standard; Food products – any products produced and/or assembled by a quick service restaurant. 3 This unit standard can be assessed using simulation but must be assessed in the workplace. Outcomes and evidence requirements Outcome 1 Prepare raw ingredients for quick service food products. Range may include but is not limited to – poultry, meat, salad vegetables, eggs, dough. Evidence requirements 1.1 Food preparation area is prepared in accordance with establishment requirements. Range ServiceIQ SSB Code 9068 includes but is not limited to – equipment, ingredients.
