Classification Dairy Manufacturing > Dairy Processing Available grade Achieved Explanatory notes 1 Definitions Organisational requirements – refer to instructions to staff on policy and procedures which are documented in memo or manual format and are available in the workplace. These include but are not limited to – site-specific and company standard operating procedures (SOPs), occupational health and safety, food safety and quality management requirements. Services – refer to electric power, water, steam, and air. They depend on specific requirements and may include high-pressure water or steam. Clean-in-place (CIP) procedures may include but are not limited to – setting and connecting pipework and valves. 2 Legislation relevant to this unit standard includes but is not limited to – Health and Safety in Employment Act 1992, Resource Management Act 1991, Animal Products Act 1999, Animal Products (Dairy) Regulations 2005, relevant Dairy Specifications/Notices. 3 Work must be carried out in accordance with organisational, licensing, and legislative requirements, and industrial awards and agreements. Outcomes and evidence requirements Outcome 1 Prepare to carry out clean-in-place processes for a dairy processing operation. Evidence requirements 1.1 Chemical stocks are confirmed as being available to meet cleaning, sanitation and organisational requirements. Outcome 2 Operate and monitor automated cleaning processes for a dairy processing operation. Evidence requirements 2.1 The cleaning cycle is started in accordance with organisational requirements. 2.2 Equipment is checked to confirm cleaning status in terms of the cleaning process cycle. Range includes but is not limited to – temperature, chemical concentration, time, turbulence or abrasion. 2.3 Checks and inspections are carried out to confirm effectiveness of cleaning in accordance with organisational requirements. 2.4 Cleaning data is recorded in accordance with organisational requirements. 2.5 Any defective processes and equipment performance are identified, rectified and/or reported in accordance with organisational requirements. Outcome 3 Dispose of waste and return plant to operating condition for a dairy processing operation. Evidence requirements 3.1 Plant is checked to ensure that cleaning chemicals are flushed and processed in accordance with organisational requirements. 3.2 Pre-start checks are completed prior to taking product in accordance with organisational requirements.
