Purpose
People credited with this unit standard are able to: comply with
hygiene standards; handle product hygienically; maintain work
area; and demonstrate knowledge of product safety in relation
to the workplace.

Work must be carried out in accordance with organisational requirements, licensing
requirements, legislative requirements, and industrial awards and agreements.

Responsibility for monitoring product safety relates to own work area, tasks and
responsibilities.

Product and/or materials handled by the operator may include raw materials,
ingredients, consumables, finished product and cleaning materials.

Product safety programme – a programme based on the NZFSA dairy industry
optimal regulation model, product safety plans and the principles of Hazard Analysis
Critical Control Point (HACCP). Such programmes are designed to identify and
control product safety risk factors, in order to establish and maintain product safety.
Risks may relate to procurement, production, manufacture, packaging, storage,
handling, and distribution of products.

Definitions
Organisational requirements refer to instructions to staff on policy and procedures
which are documented in memo or manual format and are available in the workplace.
These requirements include but are not limited to – site specific requirements,
company quality or food safety management requirements, and/or legislative
requirements.
Legislative and regulatory requirements applicable to this unit standard may include:
Hazardous Substances and New Organisms Act 1996, Animal Products Act 1999,
Animal Products (Dairy) Regulations 2005, relevant Dairy Specifications/Notices.
