Classification Dairy Manufacturing > Dairy Product Safety and Risk Management Available grade Achieved Explanatory notes 1 Work must be carried out in accordance with organisational requirements, licensing requirements, legislative requirements, and industrial awards and agreements. 2 Responsibility for monitoring product safety relates to own work area, tasks and responsibilities. 3 Product and/or materials handled by the operator may include raw materials, ingredients, consumables, finished product and cleaning materials. 4 Product safety programme – a programme based on the NZFSA dairy industry optimal regulation model, product safety plans and the principles of Hazard Analysis Critical Control Point (HACCP). Such programmes are designed to identify and control product safety risk factors, in order to establish and maintain product safety. Risks may relate to procurement, production, manufacture, packaging, storage, handling, and distribution of products. 5 Definitions Organisational requirements refer to instructions to staff on policy and procedures which are documented in memo or manual format and are available in the workplace. These requirements include but are not limited to – site specific requirements, company quality or food safety management requirements, and/or legislative requirements. Legislative and regulatory requirements applicable to this unit standard may include: Hazardous Substances and New Organisms Act 1996, Animal Products Act 1999, Animal Products (Dairy) Regulations 2005, relevant Dairy Specifications/Notices. Evidence requirements 1.1 Personal hygiene complies with work area standards. 1.2 Clothing and equipment are maintained to meet work area standards. 1.3 Personal movement around the workplace and through entries and exits complies with work area standards. Outcome 2 Handle product hygienically. Evidence requirements 2.1 Product and work area are inspected for signs of contamination and product safety hazards in accordance with organisational requirements. Range 2.2 product safety hazards may include but are not limited to – poor personal hygiene, poor storage, poor handling, poor cleaning practices. Product is handled in accordance with organisational hygiene requirements. Range hygiene standards may include but are not limited to – clothing, footwear, product handling, product storage, equipment cleaning. Outcome 3 Maintain work area. Evidence requirements 3.1 Work area and equipment are maintained in accordance with organisational requirements. 3.2 Waste is collected and disposed of in accordance with organisational waste management requirements. 3.3 Equipment and supplies are used and stored in accordance with organisational requirements. Outcome 4 Demonstrate knowledge of product safety in relation to the workplace. Range 4.4 Requirements and practices are identified in terms of their relationship to product safety. product safety requirements may include but are not limited to – personal hygiene and clothing, people movement, reporting of illness, methods and procedures for preventing contamination, handling and storage of product and materials, cleaning and sanitation, housekeeping.
