People credited with this unit standard are able to explain: the purpose of risk management programmes in the meat industry; the minimum requirements of a risk management programme in a meat processing plant; and the risk factors of a risk management programme in a meat processing plant. Evidence requirements 2.1 The explanation establishes the key components of a risk management programme. Range 2.2 key components include but are not limited to – prerequisite programmes, Hazard Analysis Critical Control Point (HACCP), evaluation of risk factors. The explanation establishes the responsibilities and actions of both employers and employees under a risk management programme in a meat processing plant. Range evidence is required in relation to two of – record keeping, monitoring, identification of risks, corrective action, reporting. Outcome 3 Explain the risk factors of a risk management programme in a meat processing plant.
