People credited with this unit standard are able to: prepare for cleaning operations; clean food preparation area; clean food storage and serving areas; and complete job-related tasks. Classification Cleaning and Caretaking > Cleaning Skills Available grade Achieved Explanatory notes 1 Competence demonstrated during assessment against this standard must comply with the requirements of: Employment Relations Act 2000; Health and Safety in Employment Act 1992; Food Act 1981; Food Hygiene Regulations 1974; Food (Safety) Regulations 2002; Resource Management Act 1991. 2 Equipment and cleaning agents must be used in accordance with manufacturer’s recommendations. 3 All cleaning operations in food areas must be completed with regard to the cultural values of the client. 4 Definitions Flat mop is a type of microfibre mop and can be used in a wet or dry condition. Mop refers to either a string/cotton, sponge or microfibre type, or a flat mop. Industry best practice refers to any enterprise and/or establishment requirements, practices, policy, procedures, methods and protocols which are in accordance with applicable legislation, regulations and New Zealand Standards. Evidence requirements 1.1 Exposed foodstuffs are removed or protected to prevent contamination and damage. 1.2 Selection of cleaning agent is compatible for use near food products. 1.3 Selected single station equipment is in a hygienic and working condition. Range bucket, mop, scrubbing brush, colour coded cloths. Outcome 2 Clean food preparation area. Evidence requirements 2.1 All waste food, loose soil and litter are removed to comply with hygiene requirements for food areas. 2.2 Damp wiping and drying is completed to leave all surfaces free from marks, soil, and excess moisture. 2.3 Treatment of all other areas complies with hygiene requirements for food areas. Outcome 3 Clean food storage and serving areas. Evidence requirements 3.1 All waste food, loose soil and litter are removed to comply with hygiene requirements for food areas. 3.2 Cleaning is completed in accordance with Food Hygiene Regulations 1974. Range 3.3 shelving, storage bins, baskets, walls, floor, inside of refrigerator. Signs of contamination and/or infestation are reported immediately on detection in accordance with industry best practice. Range may include – mould, rats, mice, cockroaches, ants, flies. Evidence of three is required. Evidence requirements 4.1 Equipment is cleaned, checked and stored in accordance with industry best practice. 4.2 All cleaning operations comply with food hygiene requirements as they relate to cleaner, equipment, cleaning operations, and cleaning agents used.
