Classification Dairy Manufacturing > Dairy Product Safety and Risk Management Available grade Achieved Explanatory notes 1 Work must be carried out in accordance with organisational requirements, licensing requirements, legislative requirements, and industrial awards and agreements. 2 Workplace information can include Standard Operating Procedures (SOPs), specifications, production schedules and test methods. 3 Cleaning materials can include cleaning and sanitising chemicals. 4 Equipment used to clean and sanitise depends on specific requirements and would normally include brooms, cloths, scrapers, brushes, mops and hoses. 5 Clean In Place (CIP) procedures may include setting and connecting pipework and valves. 6 Services depend on specific requirements and may include high-pressure water or steam. 7 Preparing equipment for cleaning includes confirming that all waste materials have been cleared and equipment is correctly locked out, tagged out or isolated as required by operating procedures. 8 Work may be carried out in confined spaces and involve exposure to hazardous chemicals. 9 Legislative requirements in this unit standard include but are not limited to compliance with: the Health and Safety in Employment Act 1992, Health and Safety in Employment Regulations 1995, Resource Management Act 1991, Animal Products Act 1999 and Animal Products (Dairy) Regulations 2005 and Hazardous Substances and New Organisms Act 1996, relevant codes of practice, and subsequent amendments. Outcomes and evidence requirements Outcome 1 Prepare materials and equipment for cleaning. Evidence requirements 1.1 Materials and cleaning equipment are prepared to meet organisational cleaning and sanitation requirements. 1.2 Production equipment is prepared for cleaning according to organisational requirements. Outcome 2 Clean and sanitise equipment. Evidence requirements 2.1 Equipment is cleaned and sanitised to meet organisational requirements. Outcome 3 Monitor cleaning and sanitation. Evidence requirements 3.1 Equipment is checked to confirm cleaning status in terms of the cleaning process cycle. Range checked for – temperature, chemical concentration, time, turbulence or abrasion. 3.2 Checks and inspections are carried out to confirm effectiveness of cleaning. 3.3 Cleaning and sanitation data is recorded to meet organisational requirements. Outcome 4 Demonstrate knowledge of cleaning and sanitation. Evidence requirements 4.1 The functions of cleaners, sanitisers and related equipment are identified. Range 4.3 19979 version 4 Page 3 of 4 cleaning and sanitation requirements could include but are not limited to – safe handling and storage of cleaners and sanitisers used, different levels of cleaning requirements depending on the reason for cleaning, use of personal protective equipment, equipment settings required for cleaning and operating respectively, inspection points, liaison with related work areas, recording and reporting. Safety issues are identified in terms of cleaning and sanitation. safety issues could include but are not limited to – regulatory requirements as they affect immediate responsibilities for cleaning and sanitation, environmental consequences of incorrect waste disposal.
