People credited with this unit standard are able to clean food courts. Classification Cleaning and Caretaking > Cleaning Skills Available grade Achieved Explanatory notes 1 Competence demonstrated during assessment against this standard must comply with the requirements of: Employment Relations Act 2000; Food Act 1981; Health and Safety in Employment Act 1992; Smoke-Free Environments Act 1990; Food Hygiene Regulations 1974; Food (Safety) Regulations 2002. 2 Equipment and cleaning agents must be used in accordance with the manufacturer's recommendations. 3 Definitions Dustrol may also be called a static mop or dust mop. While the technical applications vary between each of these, the principles are the same. The purpose is to remove dust from the floor without creating dust showers. Establishment requirements are any policy, procedure, and/or agreed requirement, either written or oral, that is made known to the candidate prior to assessment against this standard. Flat mop is a type of microfibre mop and can be used in a wet or dry condition. Mop refers to either a string/cotton, sponge or microfibre type, or a flat mop. Industry best practice refers to any enterprise and/or establishment requirements, practices, policy, procedures, methods and protocols which are in accordance with applicable legislation, regulations and New Zealand Standards. 4 All cleaning operations in food areas must be completed with regard to the cultural values of clients and staff. Range service area, dining area, waiting area. Evidence requirements 1.1 Selected equipment is in a hygienic and working condition. Range 1.2 microfibre cloths, bucket, mop, dustrol. Warning signs are displayed in accordance with industry best practice. at least one of – signs, cordons, barriers. Range 1.3 Selection of cleaning agent is compatible for use near food products. 1.4 Any reusable service items from food service are cleaned and stored in accordance with establishment requirements and industry best practice. Range trays, crockery, cutlery, service utensils, food containers. 1.5 Any condiments and accompaniments for future use are stored in accordance with industry best practice. 1.6 Rubbish and food waste are deposited in correct location, in a safe and hygienic manner, in accordance with industry best practice. 1.7 Service areas, dining areas and waiting areas are clean, free from rubbish and food waste and ready for use. 1.8 Clearance of counter service areas is in accordance with industry best practice.
