Cowboy Caviar
Ingredients:

Red wine vinegar
Olive oil
Garlic, minced
Black pepper
Avocado, ripe, diced
Black eye peas, drained
Corn kernels
Green onions, sliced
Cilantro, fresh, chopped
Tomatoes, fresh, chopped
Salt
Hot sauce, if desired
Directions:
Mix all ingredients well in mixing bowl, make a
day ahead and marinate in refrigerator.
Serve as a dip with tortilla chips, or roll into a
tortilla. You can also put a scoop on a bed of
lettuce and serve as a salad.
