Limousin Fact #1 The Limousin difference First in a series of fact sheets brought to you by Limousin breeders in south west Victoria Like most others, you are probably a bit turned off by statistics, but consider this: research* has proved that Limousin cattle produce carcasses that have…. 19% more high value cuts 8% more in yield of retail cuts and 6-11% more tenderness than other cattle of the same live weight with no extra feed! This is due to two things. Firstly the unique Limousin muscling gene (F94L). Most Limousins have two copies of this gene which causes them to lay down more muscle in the areas that matter – eg the back end. You can ask Limousin breeders whether their animals carry two copies of the gene, because we can test for it now. Most Limousin bulls will pass on one copy of the gene to all of his crossbred offspring, so the resulting calves have half the extra value above. Secondly, Limousins are not as heavy-boned as other breeds. The proportion of bone in a Limousin carcase is less than other breeds which contributes to the extra yield of retail cuts.
