Summer Chicken
Freeze leftovers for another meal on a busy night. Makes 8 cups.
INGREDIENTS

1. Heat oil in large pan. Add onion and cook until
tender.

Vegetable oil
Onion, chopped
Chicken broth, 14 oz.
Chicken, cooked and
diced
Tomatoes, 14 oz, diced
Diced tomatoes and
green chiles (Ro-tel®)
Lima beans, 14 oz.,
drained
Corn, 14 oz., drained
2. Add all remaining foods. Bring to a simmer for
30 minutes.
Money Hint: Make chicken broth by boiling a chicken and
using the liquid.
Food Hint: Cook a whole chicken and freeze the
remaining meat for later use.
Health Hint: Try different vegetables in
the stew to “vary your veggies.”
