This entry level unit standard is for people who are employed in
the smallgoods area at meat processing plants.
People credited with this unit standard are able to: demonstrate
knowledge of requirements for dispatching; arrange and
consolidate orders; load out; and comply with organisational
and statutory hygiene and safety requirements for smallgoods
products.

Meat Board Act 2004, Food Hygiene Regulations 1974, Food (Safety) Regulations
2002, Weights and Measures Regulations 1999.

Definitions
Operator – the candidate being assessed against this unit standard.
Organisational requirements – instructions to staff on policies and procedures which
are documented in memo, electronic or manual format and are available in the
workplace.
Smallgoods – smoked, cured or otherwise processed meat based products such as
bacon, ham, sausages, continental meats and salami lines.

1.1
Dispatch documents are identified and described in terms of their use.
1.2
Dispatch labels are identified in terms of their parts.
1.3
Information displayed on dispatch orders is identified and described in terms of
quality control.
1.4
Procedures for consolidating an order are explained in accordance with
organisational requirements.
1.5
Procedures for rotating stock are explained in accordance with organisational
requirements.
1.6
Procedures for transporting stock are explained in accordance with
organisational requirements.
1.7
Factors that ensure quality is controlled in the dispatch area are identified and
described in accordance with organisational requirements.
1.8
Causes of defective product are identified and described in terms of their impact
on the dispatch process.
Outcome 2
Arrange and consolidate orders for smallgoods products.
Evidence requirements
2.1
Products picked from separate areas are consolidated in accordance with the
order requirements.
2.2
Products are placed in the correct dispatch area in accordance with the order or
batch requirements.

meet order requirements.
2.4
Products are arranged and secured in accordance with organisational
requirements.

Evidence Requirements
3.1
Products are transported to load-out in accordance with organisational
requirements.
3.2
Products are loaded out in accordance with organisational requirements.
3.3
Product load-out is completed in accordance with organisational requirements
and meets health and safety regulations.
Outcome 4
Comply with organisational and statutory hygiene and safety requirements.
Evidence requirements
4.1
Company supplied clothing, and hygiene and safety equipment are worn and
used in accordance with organisational and statutory requirements.
4.2
Work methods comply with specified organisational and statutory requirements
to minimise the risk of product contamination and injuries to the operator and
others.
4.3
Contaminated meat products, surfaces, machinery, equipment and packaging
materials are handled in accordance with organisational and statutory
requirements.
4.4
Unsafe and unhygienic conditions are identified and reported to supervisory
staff in accordance with organisational requirements.
4.5
Equipment, operator and work area cleanliness complies with organisational
and statutory requirements.
