NZQA Expiring unit standard 18811 version 4 Page 1 of 4 Title Manage smallgoods products in chillers Level 3 Purpose Credits 4 This unit standard is for people who are employed in the smallgoods area at meat processing plants, without supervision. People credited with this unit standard are able to: demonstrate knowledge of the management of smallgoods products; ensure cleaning programme is followed; monitor temperature; monitor product handling and identification; and comply with organisational and statutory hygiene and safety requirements in a smallgoods chiller. Organisational requirements – instructions to staff on policies and procedures which are documented in memo, electronic or manual format and are available in the workplace. Product – may be stored in cartons or on racks. Smallgoods – smoked, cured or otherwise processed meat based products such as bacon, ham, sausages, continental meats and salami lines. Outcomes and evidence requirements Outcome 1 Demonstrate knowledge of the management of smallgoods products in chillers. Evidence requirements 1.1 Product chiller requirements are identified in terms of type of products. Outcome 2 Ensure cleaning programme is followed in a smallgoods chiller. Evidence requirements 2.1 Cleaning programme is established and maintained to ensure product safety and health and hygiene requirements are met. 2.2 Cleaning schedule is set up and followed for daily, weekly and regular fumigation in accordance with organisational requirements. Outcome 3 Monitor temperature in a smallgoods chiller. Evidence Requirements 3.1 Temperature of products is monitored daily to meet product specifications, and organisational and regulatory requirements. 3.2 Temperature of chiller is constantly maintained to ensure product safety and to meet product specifications. 3.3 Changes to temperature are corrected to maintain product specifications. Outcome 4 Monitor product handling and identification in a smallgoods chiller. Evidence requirements 4.1 Customer requirements are confirmed to determine the product order delivery arrangements. 4.2 Temperature and storage requirements for product orders are confirmed and arranged in accordance with organisational requirements. 4.3 Products are identified and labelled in accordance with product specifications and organisational and customer requirements. 4.4 Documentation for orders is completed in accordance with organisational requirements. Evidence requirements 5.1 Company supplied clothing, and hygiene and safety equipment are worn and used in accordance with organisational and statutory requirements. 5.2 Work methods comply with specified organisational and statutory requirements to minimise the risk of product contamination and injuries to the operator and others. 5.3 Contaminated meat products, surfaces, machinery, equipment and packaging materials are handled in accordance with organisational and statutory requirements. 5.4 Unsafe and unhygienic conditions are identified and corrective actions taken in accordance with organisational requirements. 5.5 Equipment, operator and work area cleanliness complies with organisational and statutory requirements.
