This entry level unit standard is for people who are employed in
the smallgoods area at meat processing plants.
People credited with this unit standard are able to: demonstrate
knowledge of linking and tying products; link and tie products;
and comply with organisational and statutory hygiene and
safety requirements in a smallgoods manufacturing operation.

Definitions
Operator – the candidate being assessed against this unit standard.
Organisational requirements – instructions to staff on policies and procedures which
are documented in memo, electronic or manual format and are available in the
workplace.
Products – refer to sausages, salamis, frankfurters.
Smallgoods – smoked, cured or otherwise processed meat based products such as
bacon, ham, sausages, continental meats and salami lines.

Outcome 1
Demonstrate knowledge of linking and tying products in a smallgoods manufacturing
operation.
Evidence requirements
1.1
Linking and tying process is explained in terms of rationale for tying and
hanging products.
1.2
Types of casings are described in terms of thick and thin walled casings.

1.3
Methods of linking are described in terms of automatic and manual methods.
1.4
Methods of tying are described in terms of colour coding of string.
1.5
Filling problems are identified and explained in terms of defects with synthetic
and natural casings.

Link and tie products in a smallgoods manufacturing operation.
Evidence requirements
2.1
Products are linked and tied at a rate commensurate with production
requirements and organisational requirements.
2.2
Products are linked using either single or triple linking methods in accordance
with product specifications and organisational requirements.
Range
includes – manually, semi-automatically, automatically.
2.3
Products are hung in accordance with organisational requirements at a rate
commensurate with production requirements.
2.4
Products are monitored against specifications and recorded in accordance with
organisational requirements.

Comply with organisational and statutory hygiene and safety requirements.

requirements.

Unsafe and unhygienic conditions are identified and reported to supervisory
staff in accordance with organisational requirements.
3.5
Equipment, operator and work area cleanliness complies with organisational
and statutory requirements.
