People credited with this unit standard are able to demonstrate knowledge of: business and production activities; organisational policies; and industry organisations in a smallgoods manufacturing operation. Smallgoods – smoked, cured or otherwise processed meat based products such as bacon, ham, sausages, continental meats and salami lines. This unit standard is Outcomes and evidence requirements expiring Outcome 1 Demonstrate knowledge of business and production activities within a smallgoods manufacturing operation. Evidence requirements 1.1 The organisation of the New Zealand smallgoods manufacturing industry is examined in terms of production mix. Range 1.2 production mix may include but is not limited to – product, processing options, methods of production. Animal species used in a smallgoods manufacturing operation are identified in terms of percentage of market value and production outputs. Outcome 2 Demonstrate knowledge of organisational policies in a smallgoods manufacturing operation. Evidence Requirements 2.1 Policies are identified and their application is explained in accordance with organisational requirements. 2.2 Information on working conditions, and workplace agreements, where available, is obtained and their relationship with the constraints of the smallgoods operation is explained. Range 2.3 information may include but is not limited to – employment agreements, work rules, statutory requirements. Information on Equal Employment Opportunities (EEO) and sexual harassment is obtained and explained in accordance with organisational and legislative requirements. Range legislative requirements include but are not limited to – Human Rights Act.
