This entry level unit standard is for people who are employed in
the smallgoods area at meat processing plants.
People credited with this unit standard are able to demonstrate
knowledge of: business and production activities;
organisational policies; and industry organisations in a
smallgoods manufacturing operation.

Legislation relevant to this unit standard includes but is not limited to – Human Rights
Act 1993.

Definitions
Organisational requirements – instructions to staff on policies and procedures which
are documented in memo, electronic or manual format and are available in the
workplace.
Smallgoods – smoked, cured or otherwise processed meat based products such as
bacon, ham, sausages, continental meats and salami lines.

Evidence requirements
1.1
The organisation of the New Zealand smallgoods manufacturing industry is
examined in terms of production mix.
Range

processing options, methods of production.
Animal species used in a smallgoods manufacturing operation are identified in
terms of percentage of market value and production outputs.

Trade markets are examined in terms of percentage of identified product from a
smallgoods manufacturing operation.

Evidence Requirements
2.1
Policies are identified and their application is explained in accordance with
organisational requirements.
2.2
Information on working conditions, and workplace agreements, where available,
is obtained and their relationship with the constraints of the smallgoods
operation is explained.

is obtained and explained in accordance with organisational and legislative
