These requirements include but are not limited to – site specific requirements, company quality management requirements, hygiene, health and safety, regulatory and legislative requirements. 2 Product Safety Programme – a programme based on the MAF dairy industry optimal regulation model, product safety plans, and the principles of Hazard Analysis Critical Control Point (HACCP). 3 Routine explanations and reports may: be in everyday workplace language including mathematical language and some commonly used technical terms; be presented orally; be presented in writing using standard format, proforma, charts and diagrams; include mathematical and other information from several sources. 4 Assessment against this unit standard must occur in the industry context, and should take place primarily on-the-job under normal working conditions. 5 Mathematical operations may include routine estimation and calculation and involve percentages, comparisons, and variations. Calculators may be used. 6 Descriptions of work practices must be in accord with codes of practice and organisational requirements. Outcomes and evidence requirements Outcome 1 Explain the nature of dairy product safety hazards and regulatory outcomes for dairy product safety programmes in New Zealand. Evidence requirements 1.1 The nature of product safety hazards is explained in terms of type and potential origin. Range types – biological, chemical, physical; origin – intrinsic, extrinsic. 1.2 Consequences of product safety hazards in dairy produce are explained in terms of potential frequency, consumer health risk, and economic implications. 1.3 Regulatory outcomes for dairy product safety programmes are explained in accordance with organisational requirements. Outcome 2 Explain control points and control measures used to control product safety hazards in dairy produce. Evidence requirements 2.1 Control points are differentiated in terms of those required for control of product safety hazards and those required for control of other attributes such as quality and legal compliance. 2.2 Control measures are identified and explained in terms of prevention, elimination and reduction of product safety hazards to acceptable levels. Range control measures may include but are not limited to – supplier quality assurance, inspection and testing, health and hygiene policies and procedures, heat treatment, temperature control, product intrinsic factor control (eg pH, water activity), environmental barrier and movement controls, pest control, services control (eg water and air quality), preventative and intrusive maintenance procedures, protective packaging, metal detection, filtration, separation, segregation, control point monitoring and recording, final product testing, product safety information labelling, rework control. Evidence is required for a minimum of four control measures relevant to a product produced or handled in the individual’s workplace. Evidence requirements 3.1 Individual responsibilities for monitoring and recording of product safety control points are explained in accordance with organisational requirements. 3.2 Individual responsibilities for reporting potential product safety hazards and breaches of product safety policies and procedures are explained in accordance with organisational requirements. 3.3 Individual responsibilities for identification and segregation of actual or potentially unsafe dairy produce are explained in accordance with organisational requirements.
