Explanatory notes
1
Definitions
Organisational requirements refer to instructions to staff on policy and procedures
which are documented in memo or manual format and are available in the workplace.
These requirements include but are not limited to – site specific requirements,
company quality management requirements, hygiene, health and safety, regulatory
and legislative requirements.
HACCP in this unit standard means Hazard Analysis Critical Control Point, a system
designed to identify hazards associated with food product and to ensure control is
established at critical points in the process.
Codex in this unit standard refers to Hazard Analysis and Critical Control Point
(HACCP) System and Guidelines for its Application, Joint FAO/WHO Codex
Alimentarius Commission, Codex Alimentarius, Vol 1A Codex Standards for General
Requirements (Food Hygiene), Supplement CAC/RCP 001-1969, Rev. 3 (1997).

Routine explanations and reports may: be in everyday workplace language including
mathematical language and some commonly used technical terms; be presented
orally; be presented in writing using standard format, proforma, charts and diagrams;
include mathematical and other information from several sources.

Assessment against this unit standard must occur in the industry context, and should
take place primarily on-the-job under normal working conditions.

Mathematical operations may include routine estimation and calculation and involve
percentages, comparisons, and variations. Calculators may be used.

All work practices must meet codes of practice and organisational requirements.

Legislative and regulatory requirements applicable to this unit standard may include:
Food Act 1981, Consumer Guarantees Act 1993, Animal Products Act 1999, Animal
Products (Dairy) Regulations 2005, relevant Dairy Specifications/Notices.

The credit value of this unit standard is based on the assumption that the candidate
has had experience in the dairy industry at a senior level and has knowledge of basic
food safety, microbiology, biochemistry, and chemistry, before undertaking a training
programme towards assessment against the unit standard.

Outcome 1
Coordinate the development of a HACCP plan for a process covered by a dairy product
safety programme.
Evidence requirements
1.1
The development of the HACCP plan is consistent with organisational
requirements.
Range
1.2
Food Safety Objectives, 7 principles of Codex, Logic Sequence for
Application of HACCP.
The HACCP plan is documented with provision for document control and
identification of amendments.
Outcome 2
Coordinate the validation and evaluation of a HACCP plan for a process covered by a
dairy product safety programme.
Evidence requirements
2.1
The HACCP plan is prepared for validation and evaluation in accordance with
organisational requirements.
2.2
Corrective actions are identified to eliminate any non-compliances following
validation and evaluation.
Outcome 3
Coordinate the verification of a HACCP plan for a process covered by a dairy product
safety programme.

3.1
Verification of the HACCP plan is coordinated in accordance with organisational
requirements.
3.2
Records are maintained in accordance with organisational requirements.
This unit standard is expiring. Assessment against the standard must take place by
