Definitions
Organisational requirements refer to instructions to staff on policy and procedures
which are documented in memo and/or manual format and are available in the
workplace. These include but are not limited to site-specific and company SOPs,
good manufacturing, occupational health and safety, food safety and quality
management requirements.
SOPs can include specifications, production and cleaning schedules and instructions,
signs and symbols, Material Safety Data Sheets (MSDS) manufacturers’ advice,
standard forms and reports.

Legislation relevant to this unit standard includes but is not limited to – Health and
Safety in Employment Act 1992, Animal Products Act 1999, Animal Products (Dairy)
Regulations 2005, relevant Dairy Specifications/Notices.
Outcomes and evidence requirements
Outcome 1
Identify the role of SOPs in training and assessment for a dairy processing operation.
Evidence requirements
1.1
Links between training and on-job assessment are identified in terms of
induction training through to formal recognition of competence.
1.2
Roles and responsibilities of on-job trainers, assessors, and moderators are
outlined in terms of their use of SOPs.

Outcome 2
Develop an SOP for the operation of a dairy processing operation.
Evidence requirements
2.1
The process, job or function is broken down into tasks in accordance with
organisational requirements.
2.2
Performance criteria are specified in terms of the outcomes required.
2.3
Language, style and terminology are appropriate for the target audience's level
of comprehension.
2.4
The information matches the identified process or function.
2.5
SOP is formatted in accordance with organisational requirements.
may include but is not limited to – SOP template, occupational
safety and health policy, food safety policy, good manufacturing
requirements, maintenance best practice.

Evidence requirements
3.1
Review of the SOP takes into account changes in organisational requirements
since the procedure was originally developed and/or last reviewed.
3.2
Recommended changes to the SOP accord with organisational requirements
and the integration of on-job training and assessment.
