People credited with this unit standard are able to assemble food products in a quick service restaurant. Classification Hospitality > Food and Beverage Service Available grade Achieved Explanatory notes 1 Legislation and regulations to be complied with include but are not limited to – Food Hygiene Regulations 1974, Food (Safety) Regulations 2002, Food Act 1981, and Health and Safety in Employment Act 1992. 2 Definitions Establishment requirements – any policy, standard operating procedure, or agreed requirement that is made known to the candidate prior to assessment against this unit standard; Food products – any products produced and/or assembled by a quick service restaurant. 3 This unit standard can be assessed using simulation but must be assessed in the workplace. Outcomes and evidence requirements Outcome 1 Assemble food products in a quick service restaurant. Range evidence is required for three different menu items. Evidence requirements 1.1 Work area is checked to ensure it is ready for service in accordance with establishment requirements. New Zealand Qualifications Authority 2016 NZQA Expiring unit standard 25495 version 2 Page 2 of 2 1.2 Stock levels of ingredients are checked prior to assembly in accordance with establishment requirements. 1.3 Work areas, utensils, and ingredients are clean, tidy, and fit for use in accordance with establishment requirements. 1.4 Food products are assembled in accordance with establishment requirements. 1.5 Food products are checked for consistency in accordance with establishment requirements. 1.6 Shift objectives and food holding times are met in accordance with establishment requirements. Assessment against the standard must take place by the last date for assessment set out below.
