This unit standard is for people who work on a trayline in hospitals and airline catering, preparing food for service and serving food.
People credited with this unit standard are able to prepare traylines for service, and serve portioned food using trayline food service equipment in a commercial hospitality environment.

Evidence requirements
1.1 Equipment for trayline service is clean and made available in sufficient quantity for food service in accordance with establishment requirements.
Range equipment may include but is not limited to
– temperature control units, service utensils.
1.2 Food for trayline food service is made available in sufficient quantity and quality in accordance with establishment requirements.

Temperature of service equipment complies with establishment and legislative requirements.
Range equipment may include but is not limited to – temperature control units, service utensils.

Evidence requirements
2.1 Portioned food meets quantity and quality requirements for meal in accordance with establishment requirements.
Range quality indicators include but are not limited to – appearance, temperature, consistency.
2.2 Holding temperature for portioned foods complies with establishment and legislative requirements.
2.3 Equipment is used in a safe manner for food service in accordance with establishment requirements.
Range equipment includes but is not limited to
– trays, cutlery and crockery for service.
