People credited with this unit standard are able to describe: product handling, processing, use and markets for cooked meat products; and types, operation, capabilities and monitoring requirements of machines used in the process of producing cooked meat products. Evidence requirements 1.1 Raw products received by the cooked meat department are described in terms of their types, amounts and sources. 1.2 Handling and storage methods are described for each type of raw product received. Outcome 2 Describe types, operation, capabilities and monitoring requirements of machines used in the process of producing cooked meat products. Evidence requirements 2.1 Each type of machine is named and its position and function in the cooked meat process described. 2.2 The output capabilities of each machine are described in terms of organisational requirements. 2.3 Any special monitoring and maintenance requirements of individual machines are described in accordance with organisational and manufacturer’s requirements. 2.4 Procedures for handling machine malfunctions and breakdowns are described in accordance with organisational and manufacturer’s requirements.
