Tighter supplies of cattle had production declining 3.3 percent. AI issues have both turkey and egg production also lower. ROUNDS: The weekly move higher with round cutout values resembled that of the chuck cutouts, with the choice round primal value moving almost $7 higher or 3.71% BONELESS BEEF: Fresh 50s progressed higher as the week developed. Compared to last Friday’s weighted average for fresh 50s closed Friday up over 41%. Nearby demand was active. This week’s cattle slaughter was estimated at 576,000 head; up 19,000 from the previous week. The market for fresh 90s was steady to a little higher this week. Supplies varied noticeably from packer to packer. This week last year saw a 564,000 head weekly kill. Saturday’s harvest under inspection assessed at 23,000 head. Live cattle weights moved another 2 pounds higher to 1389 pounds; dressed cattle gained 1 more pound to now tip the scales at 850 pounds. LOINS: Not to be outdone by the other major primal cutout values, loins were able post fairly strong gains, moving about 3% higher. Strips, short loins, and thin meats from the loin primal all gained value. 844 $15.25 LIVE CATTLE: Cattle owners and packer buyer’s negotiations for cash trade waited until Friday to commence in earnest. Cattle futures posted up limit gains on Friday and cattle owners were holding their show lists with a bit more confidence. Sales in the North for the carcass were established at $203/cwt to $205/cwt, up $8/cwt to $10/cwt from week prior. Live cattle sales in the North reported at $130/cwt to $135/ cwt, while trade in the South occurred at $135/cwt to $136/cwt. Live cattle sales moved overall $7/cwt to $12/cwt higher when contrasted with last week. CHUCKS: Chucks gained values, with most items fabricated from the shoulder gaining value. The laggard within the chuck complex remains the teres major, as demand remains sluggish for the value cut. 90 70 10/12 Source: CME Cutouts saw a huge surge higher in the first part of the week, as values for many boxed beef items were correcting from the recent low levels. As the week wore on, the pace of gains with wholesale values slowed. All primal sections of the carcass saw values improve. Ground beef sales this week were accomplished at elevated levels as well. The advancing wholesale pricing structures put somewhat of a damper on the amount of reported loads trading ownership, coming off of last week’s largest volume realized since the same time last year. RIBS: Urner Barry’s Choice Rib Primal Cutout value posted a sharp gain this week, moving over $18 higher, or 6.22%. Boneless picnic trim was supported from foodservice movement, resulting in $2.00/cwt gains. RETAIL: A look at closing loin values will show both weakness and strength, appropriate given the up-and-down trade seen in the last five days. Expectations for increased availability and seasonally lower pricing failed to materialize. Items from the picnic were also mixed. Meanwhile, butt values continued to slide. There has been considerable downside pressure on butts as availability borders on burdensome. This week alone, the market fell $7.00 to $8.00/ cwt. The sparerib trend also remained in-place. Sustained interest to feature in-place of beef or to cut-and-freeze for later use, proved to be price supportive. Spareribs were up another $4.00 to $5.00/cwt this week.
