Our company Ltd. DATE ISSUED: SUPERSEDES: New APPROVED BY: HACCP Coordinator First-In First-Out Policy B2.0 - Transport and Storage PAGE: 1 OF 1 First-In First-Out (FIFO) Policy Ingredients received first will be used in production first. When receiving new ingredients, mark all ingredients labels with the date of receiving. When stocking new ingredients on the shelves, move all old stock to the front and store new stock at the back so that the older stock will be used first and/or put old materials on top of new materials on the skid. When picking ingredients for next day’s production, check receiving date and/or expiry date and ensure those ingredients that have the earlier expiry or receiving date are picked first. Any excess ingredients (partial bags) from previous production day must be used first. If a deviation is noted and the FIFO policy is not being followed, it must be corrected immediately. The older product is brought out and inspected to ensure it can be used and will be used first. The Plant Supervisor will check that the FIFO policy is being followed on a weekly basis. All deviations are recorded on the Weekly Warehouse and Pest Control Checklist form and the deviating employee is retrained.
