Wentworth Castle & Stainborough Park Heritage Trust Catering Manager Job Description January 2016 Primary Purpose of the Job To manage catering operations at Wentworth Castle Gardens, delivering excellent standards of catering, visitor care and food hygiene, whilst meeting commercial targets and ensuring the site and its assets are safe and secure at all times. Responsible to Operations Manager, Trading Responsible for Catering staff & volunteers Principal Responsibilities Hands on management of the Café and catering team at Wentworth Castle Gardens delivering delicious food, with great service and accurate cost control. Development of new ideas to grow the catering business, increasing turnover and profitability, working with colleagues across the Trust to turn ideas into reality. MAIN DUTIES 1. Day to day running of the cafe at Wentworth Castle Gardens, taking the lead in all operation duties including set-up, customer service, food preparation and presentation, ordering, cashing up and cleaning duties. 2. Provide a warm welcome for visitors, dealing with special requests or complaints with consideration and professionalism. 3. Work closely with the Operations Manager to agree carefully costed summer and winter menus which appeal to the wide range of visitors, whilst delivering the required levels of profitability for the Trust. 4. Maintain effective relationships with suppliers, ordering and receiving stock, undertake quarterly stocktakes and regularly monitoring and rotating stock to minimise waste. 5. Ensure front of house service areas are spotlessly clean and well presented with accurate and engaging point of sale information for Visitors, correctly branded and/or themed to relevant events or festivals. 6. Maintain high standards of cleanliness at all times, complying with all hygiene and food safety regulations. 7. Lead from the front, provide supervision and training to the café team, agreeing rotas and keeping staffing levels in line with the anticipated level of trade. Monitor timekeeping and attendance and address minor disciplinary issues or training needs. 8. Work closely with the Visitor Experience Co-ordinator and Weddings Coordinator to provide hospitality for delivery of events, group visits and small functions. 9. Participate in a duty manager rota with other Visitor Centre staff taking responsibility for the opening and closing of the site, security of cash and stock, and for the safety and welfare of visitors, staff and volunteers on these days. 10. Take opportunities to learn about the history of the estate, its wildlife and gardens. Contribute as part of the wider team to help deliver the Trust’s long term objectives as a heritage restoration project, wildlife site and as a financially self-sustaining visitor attraction, 11. Take responsibility for your own personal development attending training as required and to sharing your learning with others 12. Be an advocate and ambassador for Wentworth Castle Gardens both in and outside work and protect the reputation of Wentworth Castle Heritage Trust at all times. 13. Ensure the café complies with all food hygiene and health and safety regulations and maintains its 5* environmental health rating. Substantial experience of working in a customer facing role. At least 2 years team leading experience in a café or retail environment. Experience of food safety management using ‘Safer Food, Better Business’ best practice guidelines Higher catering or management qualification. Occasional evening working required. The site is in a rural location, must be able to travel to site including Sundays and bank holidays.
