Concessions Start Up Procedures Checklist Outside Concessions 1. 2. 3. 4. 5. 6. Plug in turn on all Nesco Cookers. Fill one cooker half full of water for hot dogs. Pour two containers of beef broth and one cup of onions in another for brats and burgers that are cooked on the grill. If it is cold fill big coffee pots with water and make sure they are plugged into a working outlet. Do not plug two in the same outlet, as it will trip the fuse. Let water boil. When the red light is on, the water is hot enough. Locate the two large brown carafes in the back room and fill them with the hot water. Add one bag of hot cocoa mix to the container and stir. Once it is ready and tastes good you may fill several styrofoam cups as it will sell quickly. Refill coffee warmers with more water to keep on top of sales. Styrofoam cups and lids are stored on the shelves in the back room. If it is cold and you want to serve chili, pour one can into crock-pot and warm. Make sure cheese warmers are filled with cheese bags (two each) and the cheese is warm. The concessionaire will plug these in the night before as the cheese takes a long time to get warm. Plug in popcorn machine and turn kettle warmer on to pre-heat the kettle. Once kettle is warm, turn on stirrer. To make popcorn pour one ½ cup oil into kettle. Pour one small blue scoop of popcorn salt onto one full cup of popcorn seeds. Dump into kettle. Popcorn will pop and overflow into the machine. Wait until you have three or four seconds between the popping of last few remaining kernels and dump the rest of the popcorn out into the machine. Pop five or six kettles to begin the game and pop more as needed. You will want to have at least 25 bags ready for Varsity halftime. One person usually mans the popcorn machine for the entire game. It is a very busy station. Popcorn is stored in the big orange cooler and bags/oil are stored under the machine in the cabinet. Pull the grill from the side of the concession stand outside and out of the way of traffic and light grill. 7. Remove burgers and brats from the freezer and grill until cooked. Add them to the Nesco with the heated beef broth/onion mixture. Keep warm until ready to serve on bun. Buns are stored in the back room on the table. If necessary more are in the freezer. Use as needed. 8. Remove pretzels from freezer and find pretzel salt container in the refrigerator. Locate squirt bottle by pretzel warmer and squirt four pretzels with water and place in salt container to coat with salt. Cook 6-7 minutes in toaster oven until center is warm and soft. Remove from oven and hang on prongs in pretzel warmer. Repeat process without salt. You should have at least 15 pretzels cooked to start and make more as needed. Be prepared for the half time rush by having plenty made ahead of time. 9. Plug in and turn on pizza warmer. Papa Savarios will deliver pizza at 4pm for Freshman/JV games and 6:45 for Varsity games. He will also deliver a few chopped salads that should be stored in the Coke cooler until it is served. Pizza plates are stored under the center counter on the left. 10. Remove candy from coolers and place on the counter for display. If it is too hot outside keep candy in the coolers and sell as needed. The metal countertops get VERY hot in the early fall so be careful. 11. Fill plastic serving containers with jalapeños, pickles, and onions and place on the condiment table outside of the concession stand. Place napkin holders on table as well. Napkins are stored under the front counter. 12. Serving gloves are stored under the metal table on the right side. Anyone taking money should not be touching food. Anyone serving food should be wearing gloves and never handle money. 13. Nacho chips are stored under the metal counter on the right side. Cheese cups for the pretzels and nachos are located in the cabinet under the cheese machine. 14. Money will be given to you to place in the drawer.
