Blair Booster’s Concession Stand Set Up
Volunteers
Thank you! We support Blair athletics and our student-athletes by offering concessions for our fans. Please
arrive at the designated shift: usually 60 minutes prior to start of game for full concessions (e.g., football
game or large event indoors) and 30 minutes prior to start of game for partial concessions. This allows you to
set up the hot water and order pizza.
Keys and Cash Box
The main door to concessions will be opened by the Athletic Director or the AD’s representative on site. They
will have access to the cash box and be able to open the concession stand as well as the locked closet (both
indoors and outdoors). One person should handle the cash – and it must be an adult. In the beginning, note
how much cash is in the cash box to make change. This is the start cash amount on the cash sheet. We also
have a cash handling instructions online and near the cash box to help.
Opening/Set Up
1. Hot Water. Fill water to the MAX line shown in side the water heater(s). We have 2 good ones and they
take a while to warm up. Plug them in. Use one at a time. When one is empty, refill and start heating
water.
2. Warm up machines. If using pizza, hot dogs, or hamburgers, turn on warmer boxes. You can light one
sterno in each box to keep it warm. You can also use two in each box, but the outside gets too hot to the
touch. Each lasts 2 hours – but check the temperature in the box (it should be 135). Turn on popcorn,
pretzels, hot dog machine (if using). See individual instructions below.
3. Sign in on the volunteer form on the counter where we put the candy out, under the white plastic shelf.
4. Backroom. In the backroom you will find
a. Sterno for warming box (1-2 can will last about 2 hours). When you put one in, make sure to note
the time it started near by. It should be 135 degrees in the box.
b. Utensil box – matches, scissors, tongs, pizza cutter
c. Candy, popcorn, cup-o-noodles, chips, etc in plastic containers. Outside, they will be marked
“SATELLITE” if they are for the satellite concession stand for smaller games and are only for
partial or satellite concessions. Inside, there is no specially marked “SATELLITE” boxes – just the
main inventory and backup or safety stock (clearly marked) if you run out of something.
d. Key to unlock drink cooler.
5. Pizza, hot dogs, hamburgers, popcorn, and hot chocolate. See below for specific set up for each item if it
is being served that day.
6. Prep Main Area.
a. Set out boxes containing candy, etc on the table with prices visible. Additional price cards are in
the back room.
b. Put out ketchup, mustard, napkins, relish, etc. on the table outside.
c. Put hot dog buns and foil wrappers on table. Save the plastic bags.
7. When ready to open.
a. Open overhead door (“unlock” it first by sliding latch on refrigerator side of door).
b. Wipe off counter to sanitize the front area and work tables.
c. Tape menus on concessions windows for customers can see them.

SPECIFIC SERVING PROCEDURES
Pizza
 If having pizza, order large pizzas from Papa John on University Blvd (301-681-4400). Tell them it is
$7 per pie and you are ordering for Montgomery Blair High School Boosters. Inside, we usually order
4 pizzas for basketball games. For large events (such as Cheer competition of playoffs), this would be
6-8 pizzas. Outside, we order 8 for football games and may need to reorder. Pay out of the cash box
and put the receipt in the cash box. Write the tip on the receipt.
 Wrap each slice of pizza with foil and put back in box.
 Mark front of each box with the TIME you put it in the warmer as well as Cheese or Pepperoni so you
can see it easily when boxes are stacked in warmer.
 Stack boxes in warmer with the sterno can lit.
 To clean: Empty out the warmers. Throw away the sterno.
Hot Dogs
 If the grill is being used for hamburgers (see below), then use the grill for hotdogs. Otherwise, use the
hot dog machine.
 If making hotdogs, initially prepare 24-30 hotdogs. These take about 20 minutes to cook from the
frozen state and 15 minutes if unfrozen.
 Hotdog machine.
o Pre-heat the cooker on HIGH to start (plug in and turn on)
o Cook hot dogs on rollers.
 Check the temperature to make sure hotdogs are done (should be 165 degrees). When dogs are done
(on grill or machine), place in bun, wrap in foil WITH GLOVES, and put in warming oven.
 Store the wrapped dogs in the warming oven which is ore accessible to the counter. Be sure to light 2
sterno cans and place it in the back of the warmer and note the time. They last 2 hours. Put the
hotdogs in a 9x13 aluminum pan to make clean up easier.
 To clean: Wipe down rollers with wet sponge – no detergent. Turn on the hot dog machine briefly to
have the rollers be a little warmer. Rollers should be silver again. After cleaning, pull out
grease/water catcher and pour out and clean (do that AFTER cleaning rollers!).
Hamburgers
 Turn on grill to get up to temperature. A thermometer is in the closet to have next to the grills.
 Make sure hand washing station is next to grills – this can be a bucket with water at the proper pH
level.
 Grill hamburgers to 165 degrees.
 When burgers are done, place in bun, wrap in foil WITH GLOVES, mark as “C” for cheese if
appropriate, and put in warming oven. Note the time they went in the warmer.
 We make 80 hamburgers and 80 cheeseburgers to start for home games. Start grilling additional
hamburgers before halftime IF the inventory is down to 20 total burgers.
 To clean: Wipe down grill with grill brush when done grilling.

Popcorn
 Popcorn materials are stored in a bin in the concession stand. Make 2 batches for home games to start
for full concessions. Additional as needed.
 Wipe down popcorn kettle before turning it on (it gets hot!). Turn on all 3 switches located inside
doors of cooker, top left corner.
 Pre-heat kettle. Add butter/oil packet to the kettle while pre-heating to let it melt.
 Test after approximately 3-5 minutes by dropping a kernel in to see if it pops.
 When ready, pour popcorn into kettle and cover w/lid.
 Popping takes less than 5 minutes. When batch is finished, tip the kettle top get all the popcorn out.
 If popping a second batch, begin immediately – not n need to pre-heat. Let oil melt and then add
kernels.
 When finished popping a batch or two, turn off kettle and motor but leave on the warming lights.
 Boxes for popcorn are stored in a bin in the concession stand.
 To clean: turn off and let cool. Wipe all surfaces with paper towels (kettle, glass, floor of machine).
Water only – no detergent! Empty crumb-catcher that slides into bottom of popper.
Hot Chocolate
 Pour from ONE dispenser at a time so that there is backup hot water.
 Pour one packet in the 8 oz paper cup cup.
 Dispense hot water, but do not fill to the top.
 Use matching lid, put in stirrer.
