Concession Stand Operation
FOR SAFETY REASONS, NO ONE UNDER 18 MAY BE BEHIND
THE TABLES OR IN THE CONCESSION SELLING AREA
SETUP
 Set up 5 tables.
 Pull hotdog cart out of storage room and place along wall to right of door.
Plug extension cord in outlet next to popcorn machine.
 Set popcorn machine on table to left of the door.
 BOTH workers need to count, verify and sign your name on the starting
cash sheet in the green money bag. You may use the black money box
during the games.
 One person should retrieve food while the other person manages the cash
box. The person managing the cash box should never walk away from it
with the box open.
HOTDOGS
 Hotdogs are kept in the bottom of the soda cooler and buns are in the
wooden cabinet.
 Turn hotdog machine on and turn “front” dial to 8 to 9. Place 24 hotdogs on
the grill. (use only the front half of the rollers).
 To help with cleanup, cover the large “drip pan,” under the rollers, with
tinfoil
 As hotdogs heat up, serving temp should be 140 degrees, there is a
thermometer in the cabinet under the hotdog machine; you can turn the
dial back to 7 to 8.
 Tin foil is kept under the hotdog machine; you can place it on top of the grill
for the games.
 Buns can be kept to the side of the grill.
 Place one bun in the tinfoil; put hotdog in bun and wrap it up.
You must wear gloves whenever handling food.
POPCORN
 Popcorn supplies are kept in the red plastic bin on top of the wooden
cabinet.
 Put container of popcorn next to machine. Also place the measuring cups,
seasoning and oil on a pile of paper towels as it will get messy.
 Turn popcorn machine on. “Warmer” button
 Turn “kettle” button on to pop the corn
 Pour 1/3 cup of oil and 1 cup of popcorn with about 1 teaspoon of flavoring
into kettle to pop.
 CLOSE COVER OF KETTLE! Listen for the popping. When popping slows, turn
handle and dump out the popped corn. VERY IMPORTANT… DO NOT
LET THE POPCORN BURN… IT WILL STINK UP THE ENTIRE SCHOOL.
 If making more popcorn, repeat above steps. IF DONE, turn “kettle” off.
 When selling, fill paper bag to the top.
CANDY AND DRINKS
 Candy is kept in the wooden cabinet in the storage room.
 Place the plastic bins of candy on the table. It works best if you put the
lollipops at the end as people take longer to choose those.
 Put one each of all of the drinks on the table to show people what drink
choices there are.
 For the most part candy is $1.00 for 1 bag/bar. Lollipops and Airheads are 4
for $1.00. Taffy and Sweetarts are 3 for $1.00.
BEFORE HALFTIMES AND BEFORE THE END OF THE FIRST GAME.
 Pre-wrap several hotdogs and place them under the rollers on the hotdog
machine.
 Fill 8-10 bags of popcorn and put into something to hold them up right.
 Put several of each type of drink on the front tables to save running back
and forth when it is busy.
 Make sure candy display is full.
BEFORE THE END OF THE FIRST GAME
 Make sure the popcorn machine is full
 Place more hotdogs on the grill. There should be at least 24 cooking and or
ready toward the end of the first game. NOTE: fewer hotdogs are sold at
the girl’s basketball games, it is not necessary to make as many hotdogs.
 Restock the candy display. There is extra candy in the wooden cabinet.
CLEAN-UP AFTER HALFTIME OF THE SECOND GAME
 Secure the money box by putting it temporarily in the storage room; after
you’ve cleaned up, you will need to count the money (see instructions
below).
 Wrap–up all remaining hotdogs, hopefully not many leftover. These can be
sold for $1.00 AFTER halftime of the second game
 Fill up bags of popcorn with remaining popcorn. These can be sold for
2/$1.00 AFTER halftime of the second game
 Turn off hotdog and popcorn machines to cool down.
 There are cleaning supplies in the cabinet under the hotdog machine.
 Fill the small clear bowl with warm water from the bathroom and add
some dish soap. Turn the roller of the hotdog machine on, run dry paper
towels over the rollers to remove as much grease as possible and then hold
the soapy cloth over the rollers to clean the rest of the grease and grime
off. Also clean the drip pan under the rollers or replace tin if it is on the
tray.
 Wipe out the popcorn machine with several paper towels. Use the warm
soapy water to clean up the glass and kettle.
 Dump out the popcorn pieces from the drawer under the popcorn machine.
 Clean out the measuring cups and scoop and place back into the popcorn
machine for the next time.
 Put the Ketchup, mustard and relish back on the bottom shelf of the soda
cooler.
 After the machines are cleaned up, then put the candy away in the wooden
storage cabinet.
 Put the display soda back in the cooler.
 Roll hotdog cabinet into storage room all the way to the wall to the left of
the cooler. Hotdog machine should be slid to the edge of the cabinet as the
popcorn machine also needs to sit on the same cart for storage.
 Move popcorn machine to hotdog cart in storage room.
 Lock storage cabinet once everything is put away. The door on the left side
had a sliding lock ON THE INSIDE top of the door. Lock this first, then the
one on the outside.
 Move rolling storage cart to the front of the cooler as close to the wall as
possible.
 Put red popcorn bin on top of wooden cabinet in front of cooler window.
 Finally, make sure the key to the wooden cabinet is IN the start bag. BOTH
workers need to count the money and complete the start up cash sheet by
signing it. When the key and all money is counted and put back in the
green money bag, LOCK IT IN THE WOODEN CABINET with the candy.
