Maria Diana Faye B. Padayao 8-SSC Watson Pink Pineapple Pineapples naturally turn yellow as they ripen because of an enzyme that tells the pineapple to produce beta-carotene. In the Pinkglow Pineapple, the genetic material is modified so that the enzymes that make the flesh yellow are suppressed, resulting in a pinkish pigment. The Pinkglow pineapple has been modified to produce lower levels of the enzymes that convert lycopene to beta-carotene, allowing the fruit to become naturally pink. Lycopene is the same pigment that makes tomatoes red and watermelons pink, so it is commonly found in many fruits and vegetables and totally safe to eat.
