Purpose
People credited with this unit standard are able to make an
airline menu presentation, and establish checklists for the
preparation of airline meals.

Explanatory notes
1
Legislation and regulations to be complied with include but are not limited to – the
Health and Safety in Employment Act 1992, Health Act 1956, Food Hygiene
Regulations 1974.

In this unit standard the term ‘customer airline specifications’ means the requirements
contained in the manuals and checklists of the customer airline.

In this unit standard the term ‘enterprise requirements’ means the policy and practice
requirements of the catering company.

In this unit standard the term ‘food safety system’ means those procedures and
practices that relate to the safe preparation and handling of food. They include
legislative and enterprise requirements and the recommendations of manufacturers
and suppliers.
