NZQA Expiring unit standard 25498 version 3 Page 1 of 3 Title Coordinate production requirements in a quick service restaurant Level 4 Purpose Credits 30 This unit standard is for people who carry out the assistant manager and/or store manager’s role in a quick service restaurant, which includes undertaking the day-to-day running of a restaurant. People credited with this unit standard are able to: plan and report production requirements, coordinate production requirements, and monitor quality control in a quick service restaurant. Classification Hospitality > Hospitality Management Available grade Achieved Explanatory notes 1 Legislation and regulations to be complied with include but are not limited to – Food Hygiene Regulations 1974, Food (Safety) Regulations 2002, Food Act 1981, and Health and Safety in Employment Act 1992. 2 Definition Establishment requirements – any policy, standard operating procedure, or agreed requirement of the establishment, that is made known to the candidate prior to assessment against this unit standard. Brand Performance – refers to the requirements set by the corporate body for financial performance, promotion, marketing, customer satisfaction, quality assurance and staff management. 3 This unit standard must be assessed in the workplace. Outcomes and evidence requirements Outcome 1 Plan and report production requirements in a quick service restaurant. Evidence requirements 1.1 Staff rosters are planned on a daily basis to meet budget requirements in accordance with establishment requirements. Outcome 2 Coordinate production requirements in a quick service restaurant. Evidence requirements 2.1 Staff performance is monitored, coordinated and action is taken, where required, in accordance with establishment requirements. Range 2.2 staff performance includes but is not limited to – performance reviews, discipline procedures, staff conflict, poor performance. Daily cash management is monitored and coordinated and action is taken, where required, in accordance with establishment requirements. Range cash management includes but is not limited to – setting up floats at the beginning and end of day, topping up floats, depositing cash, removing excess cash. 2.3 Staff training is implemented and monitored in accordance with establishment requirements. 2.4 Stock is checked and an order placed, where required, in accordance with establishment requirements. Range evidence is required for three different stock items. 2.5 Staff are selected and recruited in accordance with establishment requirements. 2.6 Any maintenance tasks are assigned to appropriate personnel in accordance with establishment requirements. 2.7 Customer feedback and/or complaints are reviewed and action is taken, where required, in accordance with establishment requirements. Outcome 3 Maintain quality control in a quick service restaurant. Evidence requirements 3.1 The relationship between the candidate’s store and brand performance is identified and explained.
