People credited with this unit standard are able to: demonstrate knowledge of the smoking process; load products into smoking equipment; smoke products; monitor the smoke cycle; chill products; and comply with organisational and statutory hygiene and safety requirements in a smallgoods manufacturing operation. Organisational requirements – instructions to staff on policies and procedures which are documented in memo, electronic or manual format and are available in the workplace. Smallgoods – smoked, cured or otherwise processed meat based products such as bacon, ham, sausages, continental meats and salami lines. Range includes – liquid smoke process, cold smoking process, direct addition process. 1.2 Factors that affect the smoking process are described in terms of air circulation, product placement, and operator responsibilities. 1.3 Hazard and hygiene requirements for smoking products are explained in accordance with legislative and organisational requirements. Outcome 2 Load products into smoking equipment in a smallgoods manufacturing operation. Evidence requirements 2.1 Equipment and materials are prepared for smoking products in accordance with organisational requirements. 2.2 Products are checked to ensure spacing prior to loading is in accordance with product specifications and organisational requirements. 2.3 Products are loaded in a manner that ensures even cooking. 2.4 Products are handled at all times in accordance with health and hygiene and organisational requirements. This unit standard is Evidence requirements expiring Outcome 3 Smoke products in a smallgoods manufacturing operation. 3.1 Core temperature probes are inserted into the centre of the product as required by product specifications. 3.2 Machinery is programmed in accordance with manufacturer’s and product specifications, and meets organisational requirements. 3.3 The process is monitored and recorded in accordance with organisational requirements. Outcome 4 Monitor the smoke cycle in a smallgoods manufacturing operation. Primary Industry Training Organisation SSB Code 101558 New Zealand Qualifications Authority 2016 NZQA Expiring unit standard 18530 version 4 Page 3 of 4 Evidence requirements 4.1 Smoke cycle is monitored regularly and results noted, and deviations from the process programme corrected in accordance with organisational requirements. 4.2 Internal temperature is manually checked on completion of cycle to ensure correct smoke time has been achieved and, where necessary, further cooking is undertaken in accordance with organisational requirements. 4.3 When product type requires, and required internal temperature has been reached, a shower cycle is initiated in accordance with process specifications and organisational requirements. Outcome 5 Chill products in a smallgoods manufacturing operation. Evidence requirements 5.1 Smoked products are weighed and chilled in accordance with product specifications and organisational requirements. 5.2 Products are held at a specific and constant temperature in accordance with product specifications and organisational requirements. 5.3 Products are stored in accordance with product specifications and organisational requirements. 5.4 Products are identified and stacked in accordance with product specifications and organisational requirements. This unit standard is Evidence requirements expiring Outcome 6 Comply with organisational and statutory hygiene and safety requirements. 6.1 Company supplied clothing, and hygiene and safety equipment are worn and used in accordance with organisational and statutory requirements. 6.2 Work methods comply with specified organisational and statutory requirements to minimise the risk of product contamination and injuries to the operator and others. 6.3 Contaminated meat products, surfaces, machinery, equipment and packaging materials are handled in accordance with organisational and statutory requirements. 6.4 Unsafe and unhygienic conditions are identified and corrective actions taken in accordance with organisational requirements.
