Description
This is a Concurrent Enrollment Course, offering both high school credit through ______________ High
School and college credit through Utah Valley University. Credit from this course is transferable to all
colleges and universities. Contact the receiving institution for how the credits will be applied.
Designed for hospitality management majors and as elective credit for other business majors. Explains the
techniques and procedures of quality and quantity food production. Studies the selection and preparation of
major food products. Provides an extensive set of basic and complex recipes for practice. Includes lectures,
lab, visits of guest chefs, and field trips. Completers should be prepared to enter the working field as a prep
cook.
Prerequisites
This class is available to all high school juniors and seniors in good academic standing. High school
prerequisites apply. There are no college prerequisites for this course.

Assessment
Exams & Quizzes
1. A daily review quiz will be given the first 3-5 minutes of class on the participation cards.
2. All testing is done on-line at student’s home computer or in the writing lab. All due dates are final. At
teacher’s discretion late work will be accepted, with no more than 50% of possible points being given
3. Testing Dates will be posted in classroom and given verbally, also see assignments page for approximate
testing dates.
Other Information
* All assignments, quizzes, projects, and tests will be done on-line at students own pace, with set “complete
by” dates; after which time only one-half credit for assignment will be given no matter score received.
* Students will be informed of their performance at mid-term. Students and parents can check grades on
Power School at any time. Class time will not be used to check grades.
* Because this class requires group participation and cooperation (especially in labs), 50% of the grade will
be based on participation and attitude. The ability to work with others is critical to the success of this class
and the success of the student throughout life. The remaining 50% will be based on book work, test scores,
and assignments.
* Homework assignments must be turned in on or before the due date. Late work is only worth 50% of the
full score. There will be no extra credit assignments given.
* An excused absence may be made up. It is the students’ responsibility to get missed work when they are
absent. This needs to be done before school or after school.

Grades and Credit
You will receive the same grade for your high school course as you receive for your college course. Your
grade for this class will become part of your permanent college transcript and will affect your GPA. A low
grade in this course can affect college acceptance and scholarship eligibility.

action. Cheating will not be tolerated. It will result in a FAILING grade for the course.
In keeping with UVU policy, evidence of academic dishonesty may result in a failing grade in the course and
