COURSE DESCRIPTION:
Analysis of hospitality, recreation, and resort organizations dealing with organizational structure,
management and motivation, strategic planning, leadership, budgeting, records and reports, and risk
management
INSTRUCTIONAL OBJECTIVES:
Regardless of the specific area, no service enterprise can successfully meet their goals without
good management. This class will introduce management and administration topics common to
all successful enterprises.
At the end of the course, successful students will be able to:
1. Explain how basic management theory fits within the hospitality industry.
2. Explain the varying missions of different hospitality and leisure service agencies.
3. Explain how management focus may vary between differing agencies depending upon
mission.
4. Show an understanding of liability and risk management
5. Describe the fundamentals of budgeting
6. Understand organizational structure
7. Management decision making

COURSE EVALUATIONS:
There will be 6 online quizzes covering chapters in the text book and power point postings. In
addition, there will be a final covering the text and lectures. A term project is required. The
instructor’s evaluation reflecting class participation in course discussions will also impact grades.

SPECIAL TECHNOLOGY UTILIZED BY STUDENTS:
All students are expected to have regular access to computers capable of word processing,
spreadsheet calculations and internet access. A course web page using “Desire to Learn” will be
used to communicate the information in this class. All exams, class assignments etc. will take place
on line. Students are encouraged to find the web page early in the course and to “bookmark” it.
General information such as class notes, assignments, and grades will be available on the web only.

COURSE ISSUES:
Attendance:
Active class participation is expected (Taking part in on-line discussions, working on the
project etc). The instructor will take note of the student’s performance and will assign an
evaluation score. (I can tell when and how often you log into D2L)
On-line discussions
Each week I will post some online discussions – you are expected to read and respond weekly.
Term project
An individual term project will be required. More detail will be provided early in the class.
Class Readings
As with all classes, it is expected that students will keep up with the readings assigned in the
text. I will post class power points to cover the main issues but you should also read the
chapters in the text before you attempt the weekly quizzes.
Late Assignments
Assignments are due at the beginning of the class period on the date scheduled. Papers turned
in after that time are considered LATE! Papers turned in late are penalized 10% per each 24hour day that they are late.

Academic Conduct Expectations

Student conduct is expected to be lawful and in accordance with all federal, state and local

Cheating on on-line Tests
The weekly quizzes will be open book but…..the time will be too short to try to look
everything up. The Final exam will be closed book. Do not share information with others
about your quizzes – it counts as cheating as much as in a classroom. We will be using the
“Respondus Lockdown Browser” to take quizzes. You should download it on your computer
early in the class. If you have problems contact the computer help desk.
Plagiarism Policy
The UWF Student Handbook, Code of Student Conduct, Academic
Misconduct, states: “Plagiarism. The act of representing the ideas, words, creations or work of
another as one’s own.” Plagiarism combines theft with fraud, and the penalty is
correspondingly severe: failure for the assignment and, in some cases, for the entire course. At
the instructor’s discretion, she/he may recommend that the student be suspended from the
university. Ignorance of the rules about plagiarism is no excuse for it, and carelessness is just
as bad as purposeful violation. Students who have plagiarized have cheated themselves out of
the experience of being responsible members of the academic community and have cheated
their classmates by pretending to contribute original ideas.
