Rich Coconut Tartlets
Ingredients
Pastry
100g plain flour
50g margarine
4 x 5ml spoon cold water
Filling
15 ml jam
50g margarine
50g caster sugar
1 egg
50g coconut

Preheat oven to 200C/Gas 6
Rub in margarine to flour until mixture looks like breadcrumbs
Add water and mix to a firm dough. Knead lightly
Roll out pastry thinly and cut into rounds using a large cutter and line 9
patty tins
Place ½ teaspoon of jam in each
Cream margarine and sugar, add beaten egg and coconut. Mix well
Divide mixture evenly between the tartlets
Bake for 15 – 20 minutes until the filling is risen and golden brown
