Starting out on a career as a chef is both exciting and a little daunting. So let’s get cooking!
This City & Guilds programme is for you if you have recently joined the catering industry (such as a café, free house,
bistro, fast food outlet or restaurant) and are really keen to pick up the basic principles of food preparation and
cooking.
The course will help you develop key skills in food preparation and cooking techniques, and improve your awareness of
food safety principles. You’ll also get an introduction to health & safety in the workplace.
You’ll be able to study in your workplace at times that suits you and your employer, building a portfolio to demonstrate
your growing understanding and ability.
Where does it lead?
On completion, you can move on onto the Food Production and Cooking Level 2 or Professional Cookery Level 2.

NVQ Level 2 Diploma in Food Production and
Cooking Delivered one-to-one in your workplace
Local authority catering and schools. Residential and care homes. The National Health Service (contractors and
direct caterers). Licensed retail outlets. Whatever your food preparation role, this excellent City & Guilds course
will help you develop your culinary talent, your organisational and communication skills and improve your overall
understanding of food safety and legal obligations.
You’ll work through the course in ways that suit both you and your employer, building your portfolio to demonstrate
your growing understanding and competency. The better you get, the more your employer gains from you as an
employee.

NVQ Level 2 Diploma in Food and Beverage Service
Delivered one-to-one in your workplace
The front-of-house role is a demanding one. You need to be on top of your game in a very busy environment, while
delivering a great service experience to customers.
This City & Guild Level 2 programme is ideal for anyone in front of house areas serving food and beverages. Through
four mandatory units, you’ll build a portfolio of work as you gain skills vital to your job, including:
1) Maintaining a safe, hygienic and secure working environment
2) How to work effectively within the hospitality team
3) Give customers a positive impression of yourself and the organisation
4) Ensuring food safety when serving, storing and holding food
That’s not all. Beyond these mandatory units, you can also choose to build up the credits you need to achieve the
Diploma with other skills relevant to your job role. These could include: preparing and clearing service areas; serving
alcoholic and soft drinks; cocktails; silver service; cellar maintenance and cleaning lines; dealing with payments and
using specialist equipment.
Where does it lead?
To increase your value as an employee further still, you could progress to a Level 3 Diploma in Hospitality Supervision and Leadership

NVQ Level 2 Diploma in Hospitality Services
Delivered one-to-one in your workplace
In the hospitality and catering world, people often have to play multiple roles. Are you one of them? If your job means
you work one day in the kitchen and next in the restaurant or on the bar, this course is for you.
This City & Guilds programme is suitable for anyone who needs a basic but broad understanding in several hospitality
departments. During your course, you will gain knowledge and understanding in three main units:
• Maintaining a safe, hygienic and secure working environment
• How to work effectively within the hospitality team
• Giving customers a positive impression of yourself and the organisation
To add more credits to your portfolio of work, you can also choose other units that fit well with your role. These could
include: learning how to take payments; serving alcoholic beverages; making beds; dealing with bookings; arrivals of
guests; preparing accounts and departures; preparing and cooking meat, poultry, fish and vegetables and preparing
starters and salads.
Where does it lead?
This qualification will widen your skillset as an employee with several roles and could lead you towards a Level 3 Hospitality and Supervision
qualification.

NVQ Level 2 Diploma in Front of House Reception
Delivered one-to-one in your workplace
If you’re working in front-of-house reception, you are the face of the business you work for – and that means your
customer service skills really count.
This City & Guilds Level 2 course could be just the qualification you need to strengthen your front-of-house talents
(which is valuable for you and your employer). The units you’ll cover include:
• Maintaining a safe, hygienic and secure working environment
• How to work effectively within the hospitality team
• Giving customers a positive impression of yourself and the organisation
You’ll complete a portfolio that demonstrates your understanding and occupational competency – and shows your
employer what you can do.
There’s more. You’ll also be able to choose more units to add extra credits towards your diploma. Just pick the ones
that suit your role. They could include dealing with arrivals, preparing accounts and departures, reception services,
dealing with bookings and reservations and handling payments.
Where does it lead?
With this level 2 qualification under your belt, you could move to a Level 3 Diploma in Hospitality, Supervision and Leadership.

NVQ Level 2 Diploma in Housekeeping
Delivered one-to-one in your workplace.
If you’re working in a housekeeping role, you may think that cleaning and preparing rooms is what matters – but
customer service is important too, for you and for your employer.
This City & Guilds course is ideal for anyone in a Housekeeping / Room attendant role. It combines the practical skills
you need with those softer skills that make such a difference to your ability to do your job well. The mandatory units
cover:
• Maintaining a safe, hygienic and secure working environment
• How to work effectively within the hospitality team
• Giving customers a positive impression of yourself and the organisation
• Cleaning and servicing a range of housekeeping areas
To help you get credits towards your Diploma, you can also choose more units that you think are helpful to your
role. These could include making beds, using different chemicals and equipment, cleaning windows and carrying out
periodic deep cleaning.
As you learn, you’ll build up a portfolio to demonstrate your progress and show how your knowledge is improving.

Level 3 Diploma in Hospitality Supervision and
Leadership Delivered one-to-one in your workplace.
These days, supervisory and leadership roles in the hospitality industry demand high levels of knowledge and
expertise, as well as considerable leadership ability. If you are in such a role, or you plan to be, this high quality course leads to a valuable qualification. As you progress
and build up your portfolio of work, you’ll study important topics including the make-up of the hospitality industry,
communication, leading a team, supervision of customer service, stock control and the effective use of resources.
What’s more, by choosing optional units, you can learn even more. The wide range includes: Supervising a specific

On this City & Guilds programme, you’ll study at a pace to suit you and your employer, as you develop your culinary
skills to higher standards and improve your knowledge of kitchen supervision and health and safety practices. The
course will:
