Spring 2016 • Three-week sessions begin: Feb. 9, Mar. 15, & Apr. 5 • Stetson Lifelong at Celebration
MISSION
The mission of Stetson Lifelong at Celebration is to provide an
extraordinary educational and enriching program for mature
adults in Celebration and its environs. Dedicated to intellectual
growth, social interaction, and well-being of its members, Stetson
Lifelong is a membership program which encourages those
who are willing to volunteer their time and talents to teach and
develop courses and activities.
There are three sessions in the spring. Each session lasts three
weeks. This spring the sessions begin on: February 16th, March
15th, and April 5th. Most classes last one hour and fifteen
minutes and there are three classes for each course. Classes
meet on Tuesdays, Wednesdays, and Thursdays. In addition,
Wednesday afternoons are devoted to special lectures and events.

SPECIAL MEMBERSHIP PRIVILEGE
The Fitness Centre & Day Spa at Celebration Health is offering
members of Stetson Lifelong a corporate discount. Current
members of the Fitness Center can get monthly fees adjusted.
Please take your Lifelong registration receipt to the Fitness
Center for this great discount.
MEMBERSHIP
Membership is annual and is effective from September 1 to
August 31 of each academic year. The fee for Stetson Lifelong
Membership is $85 a year ($75 if you are 65 or older as of
September 1st of the academic year). Membership is available
only at the annual rate and is not pro-rated if you choose to join
later in the year. Membership can be purchased without purchasing
a Course Package. Membership is non-transferable.
Whether you’re in town full-time or part-time, you will always
be a Member with Stetson Lifelong! As a Member, you will not
only have the opportunity to attend classes but also be able to
participate in lectures, clubs, and activities outside of the classroom.
ANNUAL COURSE PACKAGES
These packages offer the ultimate flexibility to fit your lifestyle
and schedule throughout the year. As a Member, you can
choose from any of the Course Packages below. Members can
purchase a single course or Course Package at any time during
the academic year. The courses in a package can be used in
either Fall term, Spring term, or spread over both terms.
Courses must be taken during the membership year
(September 1 through August 31). Leftover courses or
packages do NOT roll over into the next year, and are not
transferable. You may choose to purchase a Course Package for
the entire academic year or buy packages as you go!

NON-MEMBER SINGLE COURSE OPTION
If you’re not a Member but want to take a single course you can
do that too! Non-members will be able to register for available
courses one week prior to the beginning of each term. Our nonmember Single Course Fee is $75 for under 65 years of age and
$65 for ages 65 and older.

year you are teaching. If you teach in both terms you’ll
receive another 8 Course Package for a total of 16
courses for the year.
t As a lecturer, you will receive one FREE course or
lecture to take within the academic year.
GUESTS VISITING YOU?
GUEST PASS INFORMATION
Members receive two guest passes per academic year. A pass
entitles your guest to attend ONE 75-minute class or lecture.
Guest passes may not be used for a class with a material fee.
Members must check with the Stetson Lifelong Office within
one week of the class to see if space is available. Additional
passes may be purchased for a fee of $10 per pass.
REFUND POLICY
Full course refunds will be made prior to the beginning of each
term for any registered Lifelong participant. After the first week
of classes, prorated refunds will be made for cancellations due
to illness, pressing family situations, or other circumstances
beyond a member’s control. Any participant who registers
for a course with a materials fee and requests a refund will be
refunded for the cost of the course. The participant will not
receive a refund for the materials fee. All requests for refunds
must be made in writing and submitted directly to the Stetson
Boundless Learning Office. Membership and Course Packages
are not transferable and must be used by August 31, 2016.

The Future’s So Bright, I’ve Gotta Wear Shades:
How Central Florida is Growing in the 21st
Century - NEW

Predicting the future is never easy. What is your view of
Central Florida’s future? Is it overly-optimistic, like the
title above, or do you have a more pessimistic view of what
the future will hold? Central Florida is one of the fastest
growing regions in the U.S. Its current population of 3.8
million residents and 60 million annual visitors is projected
to exceed 6.5 million residents and over 90 million visitors
by the year 2060. So the question is not whether Central
Florida grows, but how Central Florida grows.
Come to this course to learn what Central Florida leaders
are doing today to plan for and implement ways to build a
strong, vibrant economy and maintain a high quality of life.
Shelley Lauten
Shelley Lauten has a B.A. in English Education, University
of Central Florida and M.A. in Student Personnel
Administration, Western Michigan University. Shelley built
her career working in all three sectors of the community—
business, government and independent. With partner
Glenda Hood, she works with leaders to develop workable
plans for large, cross-sector community initiatives. Her
projects have included a seven-county long-range vision
for Central Florida, a community engagement process
that resulted in the SunRail name and image, strategic
communication and outreach for how we plan for our future
water supply and state-wide, long-range transportation
planning with leaders from around the state and region.
Our Political Nomination Process & How We Can
Make it Better - NEW

This course will explore how our political nominating
process works and some of the strange results it has produced
on Election Day. We will discuss how the nomination
process can be improved for the common good and how
other countries accomplish this process.
James Mantia
James Mantia obtained his B.S. in Business Administration
from the University of Missouri-St. Louis; his J.D. from St.
Louis University, School of Law; has been a member of the
Missouri Bar since 1974; and has been Special Assistant U.S.
Attorney for many years. Jim was employed for 40 years,
primarily in the federal sector, as an attorney for the U.S.
Dept. of Veterans Affairs, Social Security Administration,
and as an Assistant Public Defender. He currently serves
as a volunteer Guardian Ad Litem and Veteran Mentor
Coordinator in Osceola County.

PowerPoint Clinic for PC Users
Session #1
Wednesday, 1:15 - 2:30 p.m.
Would you like to improve and practice your PowerPoint
presentation skills? In this hands-on clinic, we will explore
some of the most powerful of this program’s functions.
We will focus especially on inserting hyperlinks, inserting
and formatting pictures, inserting audio, and inserting and
editing ad-free videos from YouTube. Please bring your
laptop with PowerPoint installed and any works-in-progress.
Be ready to brainstorm and troubleshoot with your fellow
PowerPointers! Although this course is geared to PC users,
Mac users are also welcome. This course is a repeat from
Fall 2015. Class size limited to 10.
Dolores Salvo
Dolores Salvo holds a B.S. in Education: Mathematics and
English from Edinboro University of Pennsylvania; an M.A.
in English from the University of Pittsburgh; and an M.S.
Ed. from Duquesne University. Dolores taught math and
English at a suburban high school near Pittsburgh before
being named Supervisor of Mathematics for the district. She
has presented workshops on math pedagogy and technology
at the national, state, and regional levels. Dolores is pleased
to have capped her career with her very happy years teaching
high school and middle school math at the Celebration K-12
and K-8 Schools.
Safeguarding Your Computers & Your Data
Session #1
Wednesday, 2:45 - 4:00 p.m.
The course will provide an overview of options available to
setup and secure home networks. Lesson 1 titled “Setting
Up Your Perimeter” will focus on defining common
computer and networking terms along with explaining the
features and benefits of routers. The second class “Safety

in Private” will discuss firewall, anti-virus/anti-malware
software and the best procedures for doing data backups.
The final class “Safety in Public” will cover encryption,
public Wi-Fi, password strategies and open source software.
The course material will be generic as possible to include
Apple, Microsoft and Android environments. A computer,
tablet or phone does not need to be brought to class. This
course is a repeat from Fall 2015.
Joe Horacsek
Joe Horacsek has a B.S. in Engineering from University
of Western Ontario; is a Microsoft Certified Systems
Engineer and Microsoft Certified Database Administrator.
Joe worked for major banks in the U.S. and Canada for 36
years with nearly 30 years in the Information Technology
field. He managed the lab testing environment and
provided third level support for major banking system
upgrades in the branch and office tower environments.
Social Media Sorcery

Curious what the big fuss is about in Social Media, and why
you should even worry about it? In Social Media Sorcery,
we’ll be exploring and learning about the big websites of
Social Media, how to use them, and how they can make
going on the Internet a fun and enriching experience. You’ll
learn about Tweets, Timelines and more! Social Media can
be a great way to keep in touch, share information, start a
business, or just to have fun! This course is a repeat from
Fall 2015, which was entitled “Web Wizarding 101:
Exploring Social Media.”
Vincent Gerace
Vincent Gerace has an A.A. in Media Arts from Jamestown
Community College and a B.S. in Film from Full Sail
University. Vincent is currently the Webmaster and Social
Media Manager for a number of companies, and manages
a short film and commercial videography business. He is
the YouTube expert at Social Media Visionaries based out of
Tampa, FL, and the Webmaster and Social Media Manager
for Creating Wealth USA based out of Celebration, FL.

People are now living longer than ever before! Dependence
on government programs and savings might not be the
keys to financial security we once hoped for. Why not have
some fun and learn how to have more control over your
financial future?
This class is designed to help the student to look at money
through a different lens. You can learn how to create your
own financial opportunities no matter what your age.
Expand your thinking when it comes to financial decisions
and how to increase your retirement income - all in three
75-minute sessions! This course is a repeat from Fall 2014
and Spring 2015.
Augie Bylott
Augie Byllott majored in Education and Economics at
C.W. Post College. He was awarded a Master of Real
Estate investing from Global Publishing Inc. and was
awarded Preferred Housing designation. Augie is a former
banker of 22 years and with his wife Audrey, has been
living in Celebration since 2004. He is an entrepreneur
and an active investor in real estate and is a speaker, trainer
and coach for investors and small business owners. His
philosophy for business is win-win or no deal!
Staging a House to Sell a Home
Session #3
Thursday, 1:15 - 2:30 p.m.
Maybe you want to sell your home or perhaps you have a
rental property to sell. Sellers must look at their property
through the eyes of a potential homebuyer. Staging is a
crucial part - buyers need to be able to walk into your house
and picture themselves living there. Audrey will teach you
how to make your rooms appear bigger and brighter and
how to make potential buyers want to make your home their
own. Best of all, this course will help make moving to your
new home easier! This course is a repeat from Fall 2015.

Audrey Byllott has a B.S. in Business Management from
C.W. Post College. She left Citibank as a Vice President
after 20 years to work for MasterCard USA as a Director for
five years then joined MasterCard Europe as a consultant.
Audrey and her husband, Augie, buy, renovate, and sell
houses and give seminars on real estate investing.

Thursday, 4:15 - 5:30 p.m.
Wealth Care will cover a number of financial topics
particularly relevant to those 50 and older. Come
learn about the 7 Golden Rules of Investing. We will
explain Covered Call Writing as part of your overall
asset allocation. This course will provide an overview
of investment risks and help you to understand how to
manage these risks when developing an investment strategy.
Additionally, the course will speak to securing your legacy.
You have worked long and hard – learn how to protect your
investment. This course is a repeat from Fall 2015.

The Art of Dying - NEW
Session #1

This course, based on Susan Binau’s book, The Art of Dying
– Writing Your Own Final Chapter, will explore words of
wisdom from the author and countless patients and loved
ones who have walked on the path toward death. “We know
how to greet a baby into this world. But how to cope with
the end of life doesn’t come with an instruction manual,”
says Susan Binau. Some of the topics we will discuss in this
course are: How do we learn to live our life to the fullest if
we have only limited time left to live? How do we support
our dying loved ones?
This inspirational course is for everyone seeking practical and
spiritual knowledge on how to cope with the final stages. Due
to the serious topic, it’s important to mention that the topic
is presented by Susan in a “light and positive” atmosphere.
No medical advice will be given, other than the statements by
healthcare professionals printed in Susan’s book.
Susan Binau
Susan Binau was born in Copenhagen, Denmark. As a
result of a cancer diagnosis, she began to develop resources
for other families to use when coping with loss and grief.
Susan has combined her personal experiences with illness
and her business expertise to found charities in Denmark
and the U.S. The charities raise funds to support terminally
ill families. As a children’s advocate, she has traveled
internationally to share her personal and professional
experiences with patients, patient families, healthcare
professionals, and other audiences around the globe. After
recovering from cancer she moved with her family to
Celebration for her new beginning.
Brain Train Practicum - NEW
Session #3
Tuesday, 4:15 - 5:30 p.m.
Wouldn’t we all like to remember names, dates and
appointments more easily? On a broader note, wouldn’t
we also like to preserve all of our cognitive abilities to live
independently into our later years? This second edition of
our original Brain Train course focuses on fun and practical
activities which directly address every function of the brain,
including attention, memory, motor skills, visual/spatial
skills and executive abilities. Train your total brain most
efficiently with a correct balance of mental and physical
challenges which can be adjusted in level to suit everyone.
Appropriate for original Brain-Trainers or First-Timers.
Alexis Saire
Alexis Saire has an M.Ed. in Health Education from Penn
State University, as well as a B.A. and M.A. in Dance, Butler
University. Alexis is the Health and Fitness Educator at the
Fitness Centre and Day Spa at Celebration Health. Prior to
her 10 years at Florida Hospital, she was a faculty member at
Penn State University as well as an educator at hospital and
rehab centers. Alexis has been a conference presenter for local
and national organizations on topics including yoga, stress
management, obesity, senior health issues, creativity, brain
health, and self-esteem.

Homeopathy I: Introduction
Session #1
Tuesday, 1:15 - 2:30 p.m.
Homeopathy is a complete and holistic system of medicine
that considers the mental, emotional and physical aspects
of the individual. It addresses the whole person, not just a
disease, and is remarkably effective in restoring health and
vitality. It is a safe, natural form of medicine without any side
effects that has been practiced for over 200 years; the World
Health Organization has declared that Homeopathy is the
second-most used medical system internationally. This course
will look at the origins of Homeopathy, its principles and how
to select remedies to use for common complaints, such as
colds, flu, stings, bruising, burns, anxiety, etc. This course is a
repeat from Fall 2013, Spring 2014 and Spring 2015.
Andrea Baines
B.S. in Homeopathy; Middlesex University, Regents
College, London, UK; A.A. in Business Administration,
Cape Fear Community College, Wilmington, NC. Andrea
practiced homeopathy in London at Ainsworth (the Queen’s
homeopathic pharmacy) and in Gillingham, Dorset, UK.
She was the Customer Liaison for Neal’s Yard Remedies
and moved to Orlando in July 2012. Prior to moving
to the UK, she held various jobs in the States, including
Executive Assistant to the Chancellor at the University of
North Carolina at Wilmington and Special Assistant to
the President of the National Aeronautic Association in
Washington, D.C.

Most Americans sleep fewer than the 7 to 8 hours
necessary for optimal health and well-being. Sleep loss, in
turn, adversely affects a multitude of biological processes
that increase the risk for obesity, diabetes, heart disease,
hypertension, cancer, emotional distress, substance abuse
and all-cause mortality. Dr. Cynthia Buffington will explore
physical, behavioral, emotional and environmental causes
for sleep loss and provide recommendations for improved
sleep duration and quality. Patricia Cantillo-Kodzis, ARNP,
from the Center for Sleep Disorders at Florida Hospital,
will discuss clinical sleep disorders along with the process of
diagnosis and available therapies.
Cynthia Buffington
Cynthia Buffington, Ph.D. is currently the Director
of Research and Education at the Florida Hospital
Celebration Health Metabolic Medicine and Surgery
Institute. Previously an Assistant Professor of Medicine
at the University of Tennessee, Dr. Buffington has led
a distinguished and influential career in the fields of
endocrinology, metabolism, nutrition, obesity, sleep
and preventative medicine. She speaks on these topics
internationally, has authored numerous writings in her fields
and is a member of a number of professional boards and
committees in bariatric and metabolic medicine.
Patricia-Cantillo Kodzis
Patricia-Cantillo Kodzis, M.S.N., A.R.N.P., N.P-C. is a Sleep
Clinician and CPAP (Continuous Airway Positive Pressure)
Compliance Specialist. She has been a health care provider
in Central Florida for almost 30 years, first as a registered
nurse and now as a nurse practitioner. Patti heads the Sleep
Clinic CPAP Follow-up Program at the Florida Hospital
Center for Sleep Disorders, seeing follow-up patients as well
as new consultations for the treatment of sleep disorders
including sleep apnea, narcolepsy, restless legs and insomnia.
She has been published in the International Journal of Nurse
Practitioner Educators. She is board certified by the Academy
of Nurse Practitioners and an active member in several
community and professional organizations.

understanding of the industries that have shaped the area
over the past centuries. Local business owners and members
from the Osceola Historical Society will present the history
of the timber, cattle, citrus, and tourism industries.
Ken and Lynetta Griner
Ken and Lynetta Griner are 3rd generation Floridians who
own and operate Usher Land and Timber, Inc. in Chiefland,
Florida. In addition to their large timber operation they also
have a calf operation with locations in Florida and Kansas.
Lynetta was voted the first female President of the Florida
Forestry Association in 2012 and was named Woman of the
Year in Florida Agriculture in 2013. Usher Land and Timber
has also received numerous environmental stewardship
and wildlife conservation awards including Audubon’s
Sustainable Forestry Award for the State. This course is a
repeat from Fall 2014.

Life as a Civil War Soldier - NEW
Session #1

Young men clamored to go to war in both the North and the
South. They thought it would be a lark to defend their ideals.
Little did they know they would be at war four long years.
They left farms, families, and businesses to fight for what they
believed in. How did they prepare? How did they survive? We
will look at Army life in camp and battle. Our current soldiers
are well equipped, but this was not the case in the 1860s. This
course will address what soldiers were issued and how each
soldier had to supplement what he had in order to endure the
harsh conditions. In addition, the instructors will both come
to at least one class in period costumes.

John Van Fossen
John Van Fossen has a B.S., Salisbury University; B.
Arch., University of Maryland. John’s early career can best
be described as a generalist architect. He was involved
in the design of an award-winning elementary school
in the Washington, D.C., suburbs, an award-winning
wholesale showroom on Madison Avenue in New York,
and the National Tennis Center in Flushing Meadow,
NY. He continued his early career as a generalist architect
in Salisbury, MD, designing everything from kitchen
and bathroom additions to major commercial and civic
buildings. His primary interest transitioned to urban
design, and in 1998 he joined the firm of Looney Ricks
Kiss Architects in Memphis, TN, as senior urban designer.
Since 2002, John has been in LRK’s Celebration office. He
has been involved in urban design projects throughout the
United States, including projects across the state of Florida
and here in Celebration.

In 1951, J.D. Salinger published The Catcher in the Rye, a
landmark novel that became the voice of the post-World War
II generation – and required reading in many high school
and college curricula, but Salinger’s literary standing wasn’t
fully established until the 1953 publication of Nine Stories,
a collection that some critics consider one of the finest in
American literature. Join us in reading and discussing some
of Salinger’s short stories (one or two per week). All of the
stories are contained in Nine Stories, available in multiple
formats: hardcover, paperback, and PDF for free download
from the Internet. Our first story will be “A Perfect Day for
Bananafish.” Come and meet, or be reintroduced to, some of
the characters from your youth!
Dolores Salvo
Dolores Salvo holds a B.S. in Education: Mathematics
and English from Edinboro University of Pennsylvania; an
M.A. in English from the University of Pittsburgh; and an
M.S. Ed. from Duquesne University. Dolores taught math
and English at a suburban high school near Pittsburgh
before being named Supervisor of Mathematics for the
district. She has presented workshops on math pedagogy
and technology at the national, state, and regional levels.

environmental issues, and energy conservation. His major
focus in the past seven years is in affordable-housing

Don Salvo
Don Salvo has a B.S. in Comprehensive English Education,
Edinboro University of Pennsylvania; M.Ed. in English
Education, University of Pittsburgh; M.S.Ed. in Educational
Administration, Duquesne University; Fellow/School of
Speech and Drama, Northwestern University. Don was
a long-time member of the nationally known Kenley
Players and performed in more than 60 EQUITY musical
productions. Don has performed with Joel Grey in Cabaret,
Robert Goulet in Carousel, Florence Henderson in My Fair
Lady, Juliet Prowse in The Boy Friend, Harry Goz in Fiddler
on the Roof, Arthur Godfrey, Ethel Merman, Noel Harrison

with Ford Motor Company as a co-op trainee while
an engineering freshman at Purdue University. After
undergraduate school, Jim earned a coveted engineering
position at Ford’s Design Center. As his career progressed,
Jim moved through a series of staff positions that involved
product development, manufacturing, marketing, and
consumer research worldwide. He was directly involved in

Brainpower?” cites research studies showing that playing
bridge may help people sharpen mental acuity, strengthen
problem-solving skills, prevent depression, strengthen the
immune system, and have a better life in general. Bridge is so
effective because it combines mentally challenging activities
with social interaction. So isn’t it time YOU learned to play
bridge? These courses will provide an enjoyable way for the
brand-new beginning player as well as for the very rusty
player to learn the basics of bridge.
Part 1: The Play of the Hand. In these three classes, we will
learn some simple strategies to help us win tricks.
Part 2: The Basics of Bidding. In this set of three classes,
we will learn the mechanics of bidding our hand –
communicating how many tricks we think we can win.

Freud’s theory was both revolutionary and controversial.
In this course we will discuss: Freud’s view of personality
structure (e.g. conscious vs. unconscious mind), the
“psychopathology of everyday life” (e.g. dream analysis, slips
of the tongue and defense mechanisms), his Psychosexual
Stages of Development (e.g. Oedipal Conflict and fixation),
how classical Freudian Psychoanalysis was supposed to work,
plus the elements of his theory that have been discarded and
the ways in which his theory still influences us today. The
material will be presented in a manner that reflects Freud’s
many personal foibles and flaws, as well as the genius of
some of his insights.
Dennis Schimmel
Dennis Schimmel has a B.S. in Psychology, University
of Wisconsin; M.S. and Ph.D. in Clinical Psychology,
Bowling Green State University. Dennis spent 25+ years
working in the Federal Prison System. The positions he
held include Chief Psychologist both at a medium security
prison in Wisconsin and the Medical Center for Federal
Prisons in Springfield, MO. The last 10 years of his
career he worked exclusively developing, setting up, and
monitoring drug programs throughout the federal system.
After retiring he taught a wide variety of psychology
courses at Edgewood College in Madison, WI and at
Polk State College in Winter Haven, FL. His prime areas
of expertise are cognitive approaches to counseling and
substance abuse assessment and treatment.

organizing and designing solutions for living in smaller
spaces. We will discuss the challenges of planning for
practical storage and display areas for all “stuff” while
retaining a beautiful, cohesive environment.
We will also examine trendy and classic décor and the many
styles in between. We will see how color, scale and proper
placement of furnishings and accessories can make smaller
spaces feel larger. We will learn how to design window
treatments to enhance and beautify your rooms and create an
atmosphere of elegance.
Mary Lujan
Mary has over thirty years of design experience. She worked
for Roy Hankis Interiors for three years before setting out to
practice interior design on her own. She owns Hepplewhite’s
Interiors, a design studio and showroom on Main Street
in Downtown Rochester, Michigan specializing in upscale
interior design and home furnishings since 1985. Involved in
two Model Home Shows, Mary won Best of Show both times.
She has designed rooms in several Detroit Junior League
and Detroit Symphony Show Houses. The Grosse Point
Showhouse room designed by Mary and daughter, Becky, was
featured in the Detroit News Homestyle Magazine last spring.

Psychologists and journal keepers have long recognized that
there are personal benefits to be gained from maintaining
diaries/journals. Writing about personal feelings and
experiences can positively affect emotional as well as physical
health and well-being. The practice of journal writing can
be useful for gaining clarity and focus, working through
problems, processing personal losses, and interpreting
dreams. Given the potential value in journal writing, the
aim of this course is to introduce participants to journal
writing as a self-care practice and provide techniques for a
more fulfilling writing experience. Some of the tropics for
discussion include: Reasons for Keeping a Journal, Getting

What Drives Your Car?

The course will cover the two basic drive trains: combustion
engines and electrical motors. The combustion process is
explained and the various energy sources of carbon hydrate
fuels and renewables are compared. The electrical drive is
analyzed with respect to the power sources: batteries, fuel cells
and combustion engines (hybrid). Emphasis is given to the
economics, environmental impact, and legislative constraints.
One of the sessions will deal with the so called “driverless” or
“robotic” car. Its current development status will be explained
and its potentials will be evaluated. Market credibility and
future possibilities will be presented.
Karlheinz Jaehrling
Karlheinz Jaehrling has an Engineering degree from Technical
University, Darmstadt, Germany. He has an Engineering

Tim Johnson has a B.Arch. and B.F.A in Architecture and
Fine Arts, University of Florida; an M.B.A., Rollins College.
Tim spent the last 21 years of his career with Walt Disney
Imagineering developing commercial projects for WDW
and retail projects for all the Disney Theme Parks around
the world. Those WDW projects include Team Disney,
Cirque de Soleil, Coronado Springs Resort, Celebration
Town Center, and Aulani Resort in Hawaii. Retail projects
included the re-development of Main Street at Tokyo
Disneyland and all retail venues in Hong Kong Disneyland.
NASA and the Space Shuttles - NEW

Tuesday,
Pete Crow and Carol Anne Swagler have covered the American
space program since the final mission to the Moon. They will
discuss the history of rocketry, the development of the space
program and tell their stories about the Shuttle program. The
class will be illustrated with their photographs from inside the
VAB, the Crawler, the top of the launch pads, inside firing and
launch control rooms, and on the flight deck of the astronaut
flight simulator at Johnson Space Center where they both
landed the shuttle, and where Pete docked the shuttle to the
International Space Station.

Pete Crow has a B.A. in Government and English, William
and Mary College; M.A. in Journalism, University of
Missouri. Pete worked at KSD-TV in St. Louis, was a
Managing Partner at Seine/Harbour Productions. He was
the owner/publisher of the Grove Sun Daily and is a Nicholl
Fellow with The Academy of Motion Picture Arts & Sciences.

Beginning Drawing Series I - Exploring Contour &
Shape

In this session, we will explore contour and shape through
a series of very basic exercises. Once we complete these
“warm-up” exercises, we will move on to drawing basic
household objects and continue “moving what we see”
to paper. This is a critical stage in learning to “see.”
Depending on your development we may introduce
shading early to keep you moving forward. Fee for
materials is $20. Class size limited to 15. This course is a

Meryl Rachlin
Meryl Rachlin has a B.F.A. in Graphic Design,
Massachusetts College of Art. Meryl worked on some of the
very first computer graphic systems in the country for many
years, but eventually she escaped the corporate world for
world travel where she discovered painting on walls in New
Zealand. After returning home, she studied the decorative
arts and founded Meryl’s Murals in 1995. Meryl continues
to paint murals along with Art That Pops, where she creates
custom 3-D pet portraits. Meryl also organizes the Art
& Wine Strolls in Celebration and enjoys being a part of
the Stetson Lifelong curriculum committee and teaching
drawing at Stetson and throughout the community.
Beginning Drawing Series II - Adding Dimension,
Composition, Basic Perspective

Now that you know the basics of drawing any object, we can
add dimension to our images through the use of light and
shadow. Understanding the logic of light is what shading
is all about. We will start simply with geometric shapes
and then get more complicated using fruit and vegetables
and household objects. We will also add the next layer
by learning the basic rules of thumb of composition - the
placement and cropping of your images on your page. We
will also touch on the basics in perspective and look at
various sketching techniques and styles so you can explore
your own personal style. It is strongly recommended that
students have completed Beginning Drawing Series I or have
a strong foundational understanding of drawing. Fee for
materials is $20. Class size limited to 15. This course is a

Beginning Knitting - NEW

Knitting is beneficial in maintaining manual dexterity. In
this course, you will learn knitting basics - casting on, binding
off, knit, purl and ribbing. You will also learn how to read a
basic pattern and will start working on a scarf or baby blanket

How to Take Great Photos
Session #2
Tuesday, 2:45 - 4:00 p.m.
The first two classes we will learn the 3 basics: lighting,
composition and depth of field. On the last day of class
we will walk through Celebration taking photographs of
various subjects and implementing our learned techniques.
The lakes, neighborhood and shops of Celebration will
provide a nice backdrop and bring a sense of place to your
photography – be sure to wear comfortable shoes! Cameras
will not be provided. You will need to have good working
knowledge of your own camera – specific information
regarding the manual use of cameras will not be discussed.
This course is designed for adjustable-focus cameras; it
is not recommended for cell phone cameras. Class size

Painting: Tree of Life - NEW

The Art Nouveau painting, “Tree of Life” by Gustav Klimt
challenges viewers with rich symbols and luxurious gold
color. Explore how Klimt and other artists have approached
tree forms as subject matter. Participants will use gouache,
metallic color and ink to create their own interpretation of a
tree as the subject for an art work. Beginners welcome. Fee
for materials $20. Class size limited to 15.

Cherie Montonye Dowd has a B.S. in Art Education,
Southeast Missouri State University; an M.A. in Painting,
Art Education, University of Missouri. National Board
Certification in Art. Cherie has served as an art teacher

taught in the art departments at the University of Missouri,
Lincoln University and Mineral Area College in Missouri
and Linfield College in Oregon. She served as an instructor
for the Minneapolis Museum of Art, worked as a Fine and
Performing Arts Center Program Director in Memphis, TN,
and worked as an Education Program Coordinator for the
Salem Art Association in Oregon. Since moving to Florida

Maria Barry
Maria Barry applied her academic training in sales and
marketing to a career in the travel industry in the United
States, Europe and Canada. Then as a self-taught artist she
added a career in teaching and became the president of
the largest art gallery in Osceola County. She is currently
the artist-in-residence at Gatorland and combines her two
passions, travel and teaching, as she teaches art classes on
cruise ships sailing the Mediterranean.

Stetson University in Celebration is host to ELS Language
Centers, one of the largest English language providers in the
world. In the last seven years, thousands of international
students have studied here in Celebration, and many of those
have gone on to complete their university degrees in the U.S.
International students are hungry for opportunities to talk
with Americans to learn more about our traditions and to
share their own unique and sometimes exotic cultures. In
this class, under the guidance of Rita Bostwick and Gregory
Triffon, the Academic Director and Center Director at ELS,
we will explore and share the diverse and fascinating aspects
of our growing international community and the very
important roles we all play in creating a better world. This
class will afford Lifelong Learning Members and the more
advanced ELS students an opportunity to discuss a variety
of interesting topics in an informal and friendly atmosphere.

Rita Bostwick has a B.A. in Education, Newman College.
Rita has been the Academic Director for ELS at both the
Stetson campus in DeLand as well as the Celebration
campus. She has worked in International Education both
in U.S. and abroad for over 15 years. Rita is bilingual in
English and Polish.
Gregory Triffon
Gregory Triffon has a B.A. in French and International
Business, Florida State University; an M.A. in French
Language and Civilization, New York University in Paris,
France. Gregory has been the Center Director for ELS in
Celebration for seven years, and Academic Director for ELS
in Los Angeles, CA before that. Gregory lived abroad for 10
years, and speaks English, French, German and Portuguese.

Izumi Sakurada has a B.A. in Fine Arts, Chapman
University. Izumi was born and raised in Nara, Japan.
Since 2006, she has been instructing Japanese culture and

program of Stetson University, Hilton Grand Vacations
Asian cultural seminar, National Entrepreneur Center and
various local educational institutions. Izumi is a member
of the Asian American Chamber of Commerce of Central
Florida and is currently serving on the Board of Directors for
Youth Enrichment Senior Service/Asia Trend Community
Learning Center in Orlando, FL.

This beginner course introduces Spanish to those Members
planning to experience the joy of traveling to a Spanishspeaking country. Learn the sounds of the Spanish alphabet
and feel proud to be able to read and pronounce with
ease the dialogues you’ll encounter when traveling and
interacting with native Spanish speakers. Learn and practice
basic vocabulary as the instructor provides bits of culture to

Rosario Ramirez
Rosario Ramirez has a B.S. in Business Administration and
an M.B.A., National Autonomous University of Mexico.
With more than 30 years’ experience in the classroom (from
elementary to university and continuing education), Rosario
is the owner and founder of Celebration Languages where
she focuses on the achievement of human potential through
combining education, management, foreign languages and
cross-cultural skills. She is the author of several books and
educational materials in foreign language instruction and
business administration and management.

The Spanish for Travelers II course will continue the
journey into the world of Spanish language and culture.
Participants with basic to moderate Spanish language
backgrounds are encouraged to build their own dialogues
to reflect traveling situations: saludos, pedir información,
decir la hora, ordenar comida en un restaurante, ir de
compras, pasar la aduana, visitar un museo, etc. Learn and
practice Spanish vocabulary for travelers, conjugate regular
verbs in the present tense, and write affirmative, negative
and interrogative sentences. Participants of “A Taste of
Spanish: ¡Buen Viaje!” and Spanish for Travelers I are

Voyages en Francais II - NEW

Tuesday, 4:15 - 5:30 p.m.
In this class, we will continue to practice the basics needed for
travel in La Belle France. The first class will be dedicated to
reviewing basic greetings, everyday expressions and vocabulary
covered in previous classes. The second class will focus on
basic conversation and grammar. In the final class, we will
work on food vocabulary and menus. By the end of the third
class, students should be able to navigate through the wonders
of traveling and dining in France. As a firm believer in the
immersion method, the instructor will teach the class in
French, so, s’il vous plait, leave your English at home.

This will be a social environment where you can work on
your projects, help each other, or get assistance from more
advanced practitioners – like an old time quilting bee! Bring

new and they will bring a kit with supplies and a pattern to

Sandi’s bead education began with learning from her cousin.
She has taught basic beading and bead weaving, served as

Jane took Sandi’s first bead weaving class at Stetson Lifelong
and is now addicted. She continues to take Sandi’s classes at
the Gallery One Artists and beads almost every day.
STETSON LIFELONG BONSAI CLUB
The focus of the Bonsai Club is to provide hands-on
experiences making various styles of bonsai. We will use
indoor and outdoor plants suitable for the Orlando area, such
as jades, schefflera, ficus and desert rose. Materials for this
club can be brought in by the participant or purchased at the
meetings from the facilitator for a minimal fee.
Bonsai Club meets the 2nd Monday of the month
at 9:30 am: (February 8, March 14, April 11 and
May 9).

Virgil Weiss has a B.S. in Chemistry, University of Texas; an
M.S. and a Ph.D. in Chemistry; University of Illinois. Virgil
held senior management positions in corporations including
Unilever, Hills Pet Nutrition and Loctite Corporation. After
retirement he became a Master Gardener who specializes in
the study of Bonsai.
STETSON LIFELONG BOOK (& FILM!) CLUB
Join us the third Thursday of each month at 10 am as we
ride off into the sunset – reading and discussing some of our
favorite novels of the West!
In January, we will read Lonesome Dove, the 1985 Pulitzer
Prize-winning novel by Larry McMurtry. Lonesome Dove is
a love story, an adventure, and an epic of the old frontier,
chronicling a cattle drive from Texas to Montana. As a bonus,
we will view and discuss excerpts from the 1989 Emmy
Award-winning miniseries starring Tommy Lee Jones, Robert
Duvall, Anjelica Huston, and Diane Lane.
In February, we will discuss My Antonia, written in 1918 by
Willa Cather. My Antonia, the story of pioneers in Nebraska at
the end of the 19th century, is considered to be Cather’s first
masterpiece. After our discussion of the novel, we will watch
the 1995 made-for-television film starring Jason Robards, Eva
Marie Saint, and Neil Patrick Harris.
In March, we will read Plainsong, by Kent Haruf, a 1999
National Book Award finalist. Plainsong is novel of wisdom
and grace – a story of contemporary life on the Colorado
plains. We will view the 2004 Hallmark Hall of Fame
adaptation of the book starring Aidan Quinn, Rachel
Griffiths, and America Ferrera (Ugly Betty).
In April, we will conclude our visit to the American West
with Louise Erdrich’s 2012 National Book Award-winning
The Round House, a coming-of-age story set on a modern-day
Ojibwe reservation in North Dakota. After our discussion,
we will view Shouting Secrets, an award-winning independent
film about a Native-American family with unique struggles
but universal truths.

Dolores Salvo
Dolores Salvo has a B.S. Education: Mathematics and English,
Edinboro University of Pennsylvania; an M.A. English,
University of Pittsburgh; an M.S.Ed., Duquesne University.
Dolores spent much of her career as a math administrator and
teacher in Pennsylvania and at Celebration School, but she
especially enjoyed her early years of teaching both English and
math. She is excited by the prospect of once again indulging
her passion for literature by helping facilitate the Stetson
Lifelong Book Club.
STETSON LIFELONG MOVIE CLUB
Join us on the second Thursday of each month at 9:30 am
to view and discuss a series of great movies. For the spring
term we’ll be screening and discussing the life and career of
Katharine Hepburn. Katharine Hepburn is the only fourtime winner of an acting Oscar and every one of her wins
was for a Best Actress role. On January 14th, the movie
will be Bringing Up Baby, a screwball comedy from 1938
in which she co-starred with Cary Grant. On February
11th, we’ll see Woman of the Year from 1942. This was her
first movie with Spencer Tracy, with whom she carried on a
lifelong affair. On March 10th, we’ll see Guess Who’s Coming
to Dinner, her last movie with Spencer Tracy and her second
Oscar. Finally, on April 14th, we’ll watch The Lion in Winter
from 1968 for which she won her third Oscar.

Joe Horacsek has a B.S. in Engineering, University of
Western Ontario; Microsoft Certified Systems Engineer and
Microsoft Certified Database Administrator. Joe worked for
major banks in the U.S. and Canada for 36 years with nearly
30 years in the Information Technology field. He managed
the lab testing environment and provided third-level support
for major banking system upgrades in the branch and office
tower environments.
STETSON LIFELONG ORIGAMI CLUB
Join us on the first and third Mondays of the month to
continue exploring and sharing your Origami creations. These
will be fun, informal meetings where you can come as a novice
and learn or come as an expert and share. There is no pressure.
Origami is a creative art that can benefit manual dexterity, fine
motor skills, and allow you to use your brain in a different
way. It can be very relaxing while challenging in a good way!
No need to bring any supplies, we have more than enough to
get you started.

Izumi Sakurada has a B.A. in Fine Arts, Chapman University.
Izumi was born and raised in Nara, Japan. Since 2006, she
has been instructing Japanese culture and language in private
and group sessions as well as online. She has taught workshops
and seminars for the Road Scholar program of Stetson
University, Hilton Grand Vacations Asian cultural seminar,
National Entrepreneur Center and various local educational
institutions. Izumi is a member of the Asian American
Chamber of Commerce of Central Florida and is currently
serving on the Board of Directors for Youth Enrichment
Senior Service/Asia Trend Community Learning Center in
Orlando, FL.

Alexis Saire has an M.Ed. in Health Education from Penn
State University, as well as a B.A. and M.A. in Dance, Butler
University. Alexis is the Health and Fitness Educator at the
Fitness Centre and Day Spa at Celebration Health. Prior to
her 10 years at Florida Hospital, she was a faculty member at
Penn State University as well as an educator at hospital and
rehab centers. Alexis has been a conference presenter for local
and national organizations on topics including yoga, stress
management, obesity, senior health issues, creativity, brain
health, and self-esteem.

CEONEO - A Journey Through Life
Retro rock band CEONEO plays original rock and country
rock with lyrics that try to make a difference. Started in
Denmark by Danish-American Alan Binau, CEONEO has
released two albums, an EP and several singles. Two songs
have hit the Scandinavian charts. After touring the world
and battling cancer, Alan decided to move to the U.S.,
bringing with him songs about all aspects of his life and his
many travels. Examples of his inspiration can be found in
CEONEO songs about earthquakes in New Zealand, the
aborigines in Australia, Jack the Ripper, cowboys, how it feels
to become a father, and how much we all love the Beatles.

Kim Kapes - Wolf Ki Do (The Way of the Wolf)
What can be learned from this apex predator? A study of
life of the wolf pack and group dynamics provides lessons
for any human wanting to learn about their own behavior,
human interactions and their relationships with pet dogs.
Kim Kapes, author and director of “In Harmony with
Nature” animal haven, will share her experiences with captive
wolves, wolf dogs, and companion dog.

Benvenuti Amici: Welcome Friends! Join Don and Dolores
Salvo for a whirlwind tour of Italy through music and video
clips. They will lead an exploration of this magnificent

and Italian-Americans. For 75 minutes, let’s all “Be Italian!”

Kim Titterington - Swamp Girl Adventures
Swamp Girl Adventures is a non-profit organization striving
to educate others about Florida’s wildlife and habitats,
promote conservation and the great outdoors, and assist in
the care and rehabilitation of animals in need. Swamp Girl
Kim Titterington, founder and director of “Swamp Girl
Adventures,” will present an overview of Florida’s abundance
of wildlife from little lizards to large gators! Learn more
about common backyard critters and the conservation and
rehabilitation of Florida’s amazing creatures.

Chiropractic Care & Treatment Procedure
Learn how modern advances in chiropractic care and
procedures can be an effective treatment for many spinal and
soft tissue injuries. Dr. Brennan, a Celebration chiropractor,

Spinal technology, trigger point laser therapy and spinal
decompression and their clinical usage in chiropractic and
therapeutic treatment.

Porch, Friday Flash, and Celebration Facebook. The 2016 20th

Design
This lecture provides an overview of designing immersive,
environments for the Theme Park and Entertainment industry.
Rich West, a designer, illustrator, and art director, will provide an
inside look at Universal Studios and the production of some of
the park’s live entertainment events, such as Halloween Horror
Nights, Mardi Gras and Grinchmas. In addition, he will explore
some of the main attractions including The Mummy’s Revenge,
The Simpsons Ride and The Wizarding World of Harry Potter.

Connie & Ken Gleason - The Story of the Quilt
During the War
Today’s US military is the best equipped in the world.
However, that was not the case in the 1860s. Join educators
and Civil War historians Ken and Connie Gleason for a
presentation on the roles of women in the 1860s: aiding their
husbands, sons, and brothers prepare for and survive four long
years at war; and run the farms and businesses soldiers left
behind, something the women seldom had the opportunity
to do previously. Some consider this period the beginning
of the women’s suffrage movement. The Gleasons will dress
in full period costumes and share reproductions of quilts
representative of this period.
