By the 16th Century, Sherry had become the world's finest wine. It is said Magellan spent more on Sherry than weapons for his sail around the world; quite a risky investment. There are a few different types of Sherry. Fino is the driest of the traditional varieties, followed by Manzanilla, Amontillado, Oloroso, and Palo Cortado. In 1860, a sweeter style was introduced known as Cream Sherry which is essentially blending different styles together. The Solera System is the most important, and also highly complex, part of Sherry Production. Barrels are stacked, with each row corresponding a different age. When wine is extracted from the bottom barrel, the same amount of wine is extracted from the barrel above it, and then the same is done to that barrel, etc. Thus, grapes in a bottle of Sherry could be much older than is stated on the bottle.
