2015 Star Rating Announcement
Forbes Travel Guide last week unveiled its annual Star Rating list, awarding Kai restaurant
at the Sheraton Wild Horse Pass Resort & Spa with their highest rating, the Five-Star Award
for the seventh consecutive year. Kai is the only restaurant in Arizona and one of only 38
restaurants in the entire nation to receive this prestigious honor.
It is an honor to once again receive these awards from Forbes Travel Guide; recognition that

Kai Restaurant is proud to once again be participating in Devoured Culinary Classic, the
region's premier annual culinary event presented by Local First Arizona, Phoenix Art
Museum, Devour Phoenix, Quench Fine Wines and the Southern Arizona Arts and Cultural
Alliance.
Devoured Culinary Classic aims to showcase the fine food and drink producers and
purveyors of Arizona while furthering metro Phoenix as a dining destination worthy of

WINE MORSEL
Sherry
Sherry has been produced for centuries. It has survived countless battles in the town of
Jerez. By the 16th Century, Sherry had become the world's finest wine. It is said Magellan
spent more on Sherry than weapons for his sail around the world; quite a risky investment.
There are a few different types of Sherry. Fino is the driest of the traditional varieties,
followed by Manzanilla, Amontillado, Oloroso, and Palo Cortado. In 1860, a sweeter style
was introduced known as Cream Sherry which is essentially blending different styles
together.
The Solera System is the most important, and also highly complex, part of Sherry Production. Barrels are stacked,
with each row corresponding a different age. When wine is extracted from the bottom barrel, the same amount of
wine is extracted from the barrel above it, and then the same is done to that barrel, etc. Thus, grapes in a bottle of
Sherry could be much older than is stated on the bottle.
