Coconut Sweets
Ingredients
25g margarine
30ml lemon curd
2.5ml vanilla essence
50g icing sugar
60g coconut
To Assemble
10ml icing sugar
45ml toasted coconut
Equipment
large bowl
wooden spoon
small bowl
tablespoon
knife
plate (between 2)
12 small paper cases
Method
1. Place margarine, lemon curd and vanilla essence into a large bowl and
mix until smooth using the back of the wooden spoon.
2. Using electronic scales, weigh icing sugar and coconut in a small
bowl. Remember to zero the scales after you place the small bowl
on the scales and when you start to weigh the coconut.
3. Add the icing sugar and coconut to the large bowl and mix with a
wooden spoon to form a sticky dough like mixture.
4. Sprinkle 10ml of icing sugar onto your work surface and empty the
sweet mixture on top.
5. With your hands, shape the mixture into a sausage shape (the
length of a knife).
6. Cut mixture into 12 equal pieces.
7. Roll each piece of mixture in the palm of your hand to form a small
ball.
8. Place 45ml of toasted coconut onto a plate and in a rolling motion,
coat the sweets with the coconut.
9. Place the sweets into the small paper cases.
10.Serve chilled.
