Irish Potatoes Are they really Irish? O Irish potato candy is a traditional Philadelphia confection that, despite its name, is not from Ireland, nor does it usually contain any potato.[1] The candies have a coconut cream inside (generally made from some blend of coconut, confectioner's sugar, vanilla, and cream or cream cheese) and are rolled in cinnamon on the outside, resulting in an appearance reminiscent of small potatoes.[1][2] The treats are about the size of a large marble and are especially popular around St. Patrick's Day.[1] Let’s make some! Toast the coconut O Place 1 cup of of coconut on a parchment covered pan- make sure it is a thin layer O Place in the oven ( 325 degrees) and toast until golden brown O It will take about 5 minutes in the oven While the coconut is toasting O Using the hand mixer, cream ¼ cup butter and 4 Oz of cream cheese O Add 1 tsp vanilla and 4 c of powdered sugar to butter mixture- mix until smooth O Don’t add all the sugar at once- it will make a mess! O Using your hands, kneed in the toasted coconut O Roll the mixture into small potato shaped balls O Coat in cinnamon O Refrigerate on a plate until tomorrow
