Protein Power Bars 2 cups almonds raw ½ cup ground flaxseed ½ cup unsweetened shredded coconut ½ cup creamy almond butter ½ cup coconut oil 4 drops Stevia 1 tbsp agave nectar 1 tbsp vanilla 1 cup dark chocolate chips Place almonds in a food processor or blender, grind to a fine to medium crumb. Add flax, coconut and almond butter. Pulse in blender, about 10 seconds to mix well. In a small sauce pan, melt coconut oil over very low heat. Remove coconut oil from stove, and stir Stevia, agave, and vanilla into oil. Add coconut oil mixture to food processor and pulse until ingredients form a coarse paste. Press mixture into an 8x8 baking dish. Chill in refrigerator for 1 hour, until mixture hardens. Melt chocolate, spread over bars, return to the refrigerator for 30 mins until chocolate hardens. Remove from refrigerator, cut into bars and serve. Store in freezer. Each bar is about 148 cal and has about 7 g/protein per slice.
