What’s New and News in June &
July 2012?
For those of you following our progress on
attempts at opening up a Café in Prahran, we
are still waiting for further meetings with VCAT
so hence it is quite difficult to plan very much in
advance. Consequently just a few classes at a
time are being listed.

Classes continue to be held at Mt Waverley Cooking School. How to find us: Access the Cooking
School via the S-E Freeway. Turn off at Forster Road exit and continue right into Waverley Road.
Regent Street is only a couple of streets down on the left. Except in peak hour traffic, it takes around
15 to 20 minutes from the city.
DELIGHTFUL VEGETARIAN DINNER
(One lesson)

There are occasionally times when you don’t want to serve meat and this is a single lesson created
around superb vegetables; a first course, main dish with accompaniments, and a luscious dessert.
This could be a really useful thing for the times when you do have non-meat eaters.

CURRY CREATIONS (Two week lesson)
(NEW)
You may not think this is applicable to you but the big difference in making your own is that you can
control the heat. It will still leave fragrant spices, rich sauces and give you a dish that is even better
reheated.
One lesson will be modeled on Curry Tiffin, the buffet which originated during British days in India and
has been transferred to countries such as Singapore where a range of curries, perhaps beef, chicken
and lamb featured. Most important are the accompaniments: spiced turmeric, golden rice and dishes
such as a mint raita, chutney, pappadams, cucumber and toasted coconut, presenting a colourful and
very tasty dinner.
This lesson will be served like a buffet of curries and accompaniments. The second class will be on
curries from countries other than India. Vietnam, Thailand, Indonesia and Singapore have fabulous
curry creations. Spices which are used are readily available and you do not need any special
equipment.

CLASSICS FROM AROUND THE WORLD (Two week lesson)

These are beautiful main course classics mixed with some less familiar dishes. Great food for
entertaining or parties as most can be prepared in advance. I have chosen dishes which will fit into our
life style and most peoples’ tastes.
For example, I shall be demonstrating a Vietnamese beef stew, fragrant with lemon grass, ginger and
star anise, then braised pork in a 5 spice sauce. Spanish lamb shanks have a special ingredient to
make a rich sticky sauce and from Piemonte a polpettone, a meat roll which is beautiful hot or cold and
from Greece the best dish I could find for Moussaka. Mexico is represented by a chicken in a
vegetable sauce with crispy fried crumbs and Portugal by a whole chicken which is marinated, stuffed
with onions, egg, olives and minced pork and roasted until golden and crisp.

information and if you wish reserve a table or if you would like to come on your own, there will be a
large table for mixed groups.
Terms & Conditions for Booking Classes:
We can take telephone or email bookings or fill out the enclosed form and either post or fax. Payment is required in advance
before each class (unless alternate arrangement is made in agreement with us) and is non refundable. Should you be unable
to attend, you may transfer to another class provided 10 days notice is given.
If something should happen and you cannot attend you can always send a substitute person on the day. If you are unable to
do this, we will provide you with a copy of the recipes from the lesson.
