Job Title: 2nd Chef Main purpose of job: To deputise for the Manciple to prepare and serve food to the standards set by the Manciple. To assist the Manciple in the running and administration of the Kitchen. This post is aimed at providing a challenging position in terms of food production as well as a proving post for a mature chef with ambition to run their own kitchen in a few years. Therefore there will be considerable emphasis placed on the management of the kitchen and its staff as well as the actual food production Relationships: a) Responsible to: The Domestic Bursar through the Manciple b) Responsible for: 3rd and 4th Chefs, Assistant Chefs, Kitchen Assistants, Apprentices & Porters c) Liaison with: Catering & Admin. Staff, Suppliers, Outside Contractors, Fellows, Students Visitors Main tasks of job: Prepare and serve food to the standards set by the Manciple, leading the team when the Manciple is absent Assist with the smooth and efficient running of the kitchen in producing and presenting food to a high standard for fellows, students, conference and banqueting visitors and staff Participate in the planning and production of menus Undertake cost control in food preparation and menu planning within cost guidelines Ensure all goods received are properly checked and carefully stored Share in the cleaning and good housekeeping practice in the kitchen, and maintain high standards of cleanliness in all areas paying due regard to all Food Hygiene legislation Help to direct and maintain health and safety standards of the kitchen, paying due regard to the College Health and Safety Policy in all areas of responsibility Have regard for the security of the College, reporting any suspicious activity or occurrence The above is not an exhaustive list of duties and you will be expected to perform different tasks as necessitated by your changing role within the college and the overall business objectives of the organisation. Remuneration and Terms This post will be paid between £27,000 to £30,000 pa depending on skills and experience. The post is full time, normally 40 hours per week on a rota basis. The working day will involve split shifts over 7 days per week but regular days off will be factored in. The College offers 20 days annual leave per annum plus, in addition to most Bank Holidays (those worked are compensated for elsewhere), 5 days compulsory leave at Christmas and 4 days in the Easter vacation. Membership of the staff contributory pension scheme, and free meals when working, and when the kitchen is open, also form part of the package. Some overtime will be essential during peak conference times. Notice During the initial probationary period of nine months, notice will be two weeks on either side. Subject to satisfactory review and confirmation of the post, the notice period will be three months on either side. Employment Criteria Criteria Qualifications and experience as a senior chef in either a College or commercial setting. Food Hygiene Level 3 Certification Ambition to become Head Chef at a similar institution Experience of Pastry work Articulate in both written and spoken English Organised and Punctual Ability to produce menus and keep them to cost limits Ability to prioritise tasks Experience of supervising a diverse team Customer Service ethos Numerate and accurate IT and internet capable – familiar with MS Office applications and capable of learning bespoke applications Ability to relate to a wide range of people and interact with them. Ability to work to deadlines Able to respond flexibly and adapt to changing and challenging circumstances Has a smart professional appearance which is appropriate for the Post.
