Prairie Pizza
Team Trio from Killarney Collegiate
Flat Bread Dough:
*1 1/2 cup local organic flour
2 tbsp instant yeast
1/2 tsp salt
*1 tsp honey
*1/3 cup hemp seed oil
1 cup water
½ tsp baking powder
*1/2 cup local organic ground flax
*1 egg
1 tsp cracked pepper
Cover yeast with warm water in small bowl. Let sit until other ingredients are mixed. Mix eggs, oil, salt,
pepper, honey, and baking powder together. Add flax and flour. Slowly add water. Add yeast. Add
additional water if necessary to make dough workable. Scale and round. Let sit for a few minutes before
rolling out.
Topping # 1
*Pesto – made fresh with *basil, *hempseed oil, parmesan cheese, salt, sunflower seeds, *garlic
*1 cup local free-range chicken, sliced
*1/3 cup roasted canned peppers
*1/4 Manitoba grown mushrooms soaked in balsamic vinegar
*sprinkle of dried herbs
*1/2 cup Manitoba produced cheese
Topping #2
*1 cup homemade spaghetti sauce (includes tomatoes, onions, garlic, basil, oregano, parsley, celery,
zucchini, carrots)
*1 cup locally grown spinach
*1 cup sundried tomatoes
*1/4 cup locally grown dehydrated onions
*sprinkle of dried herbs
*1/2 cup Manitoba produced cheese
Cut dough in half. Roll out one half of dough to desired thickness and place on pizza pan sprinkled with
cornmeal and *pea flour. Spread pizza with freshly made pesto. Top with chicken, roasted peppers, and
mushrooms. Cover with cheese and sprinkle with herbs.
Roll out second half of dough to desired thickness and place on pizza pan sprinkled with cornmeal and *pea
flour. Spread pizza with spaghetti sauce. Top with spinach and tomatoes. Cover with cheese and sprinkle
with herbs.
Place pizza in preheated oven at 425oF. Bake for 10-15 minutes until crust is golden brown and cheese is
melted. Sprinkle onions on pizza during last 5 minutes. Slice and enjoy!!!
