Simmer for 10 minutes Add Celery and Peas and cook for 2 minutes Serve hot with bread Recipe Card Starter - Healthy Homemade Kebabs Difficulty Level: Expert Time Required: Ingredients: Grated zest of 1 lemon Juice of 2 lemons 3 tbsp olive oil 1 tbsp clear honey 4 green cardamom pods, crushed and pods discarded 2 tbsp chopped fresh coriander 450g skinless chicken breast fillets cut into 2.5cm cubes 1 pineapple, peeled, cored and cut into chunks Instructions: Mix together the lemon zest and juice, oil, honey, cardamom seeds and chopped coriander in a shallow dish. Season with freshly ground black pepper. Add the chicken and toss to coat well, then cover and leave to marinate in the fridge for 1–2 hours. Soak 12 wooden skewers in cold water for 30 minutes. To make the pitta crisps, preheat the grill to moderate. Cut each pitta bread across in half, then split into 2 layers. Mix together the oil, garlic and herbs and lightly brush each piece of pitta on both sides with the oil mixture. Place the pitta on the rack in a grill pan (you may need to do this in 2 batches). Grill for 4–5 minutes or until lightly browned and crisp, turning once. Place on a plate and keep warm, or transfer to a wire rack to cool. Thread the chicken pieces, pineapple chunks and baby plum tomatoes alternately onto the skewers, dividing the ingredients evenly. Grill for 10–15 minutes, turning occasionally, until the chicken is cooked through and tender. Brush the kebabs regularly with the marinade to prevent them from drying out. Place sauté chicken, onions, and mushrooms in oil for 4 minutes. In lg saucepan, melt butter; stir in flour until smooth. Add chicken broth, bouillon and cream. Stir in basil and pepper. Recipe Card Main – Roasted Vegetable Stew Difficulty Level: Medium Time Required: 40minutes Serves: 4 Ingredients: 4 carrots, cut into chunks 4 small parsnips, or 3 large, cut into chunks 3 red onions, cut into wedges 2 red peppers, deseeded and cut into chunks 2 tbsp olive oil 1 tsp each ground cumin, paprika, cinnamon and mild chilli powder 400g can of chopped tomatoes 2 small handfuls soft dried apricots 2 tsp honey Instructions: Heat oven to 200C/fan 180C/gas 6. Scatter the veg over a couple of baking trays, drizzle with half the oil, season, then rub the oil over the veg with your hands to coat. Roast for 30 mins until tender and beginning to brown. Meanwhile, fry the spices in the remaining oil for 1 min – they should sizzle and start to smell aromatic. Tip in the tomatoes, apricots, honey and a can of water. Simmer for 5 mins until the sauce is slightly reduced and the apricots plump, then stir in the veg and some seasoning. Serve with couscous or jacket potatoes. Recipe Card Main – Roasted Pork Loin Difficulty Level: Hard Time Required: 35minutes + Preparation over night Serves: 3 Ingredients: 2 tablespoons Dijon mustard 1 teaspoon sesame oil 3 cloves garlic, minced Fresh ground black pepper to taste 1 cup maple syrup 1 1/2 pounds pork tenderloin Instructions: Combine mustard, sesame oil, garlic, pepper, and maple syrup. Place pork in a shallow dish and coat thoroughly with marinade. Cover, then chill in the refrigerator at least eight hours, or overnight. Preheat grill for medium-low heat. Remove pork from marinade, and set aside. Transfer remaining marinade to a small saucepan, and cook on the stove over medium-low heat for 5 minutes. Brush grate with oil, and place meat on grate. Grill pork, basting with reserved marinade, for approximately 15 to 25 minutes, or until interior is no longer pink. Avoid using high temperatures as marinade will burn.
