Recipes & Helpful Hints –submitted by our patients who have had jaw surgery From the office of Dr. Hugh Lamont Recipes for patients of Dr. Lamont that are scheduled for Orthognathic (jaw) surgery. This brand new recipe book is designed for our patients who will be undergoing orthodontic treatment in conjunction with Orthognathic surgery. It is full of nutritious recipes from Dr. Lamont, staff, and both current and former patients. We recognize that it is extremely challenging to navigate meal preparation following orthognathic surgery and to ensure that you have enough calories, vitamins and minerals, and nutrition, let alone a variety of interesting meals while you recover. Here are a few favourite Liquid Diet Recipes: Protein Shake Ingredients 2 scoops of Medipro (protein powder containing vitamins from my naturopath) 1 scoop VegeGreens 1 T organic ground flax 1 cup of Almond Milk and or organic yogurt (May substitute with fresh berry juice.) Choice of frozen fruits with no seeds (e.g. peaches, mangoes, bananas etc.) Procedure Blend together and sip slowly. Submitted by J. It is light, tasty and most of all easy... Here are some Post First Week – Soft Food Diet Recipes Blended Oatmeal Make your favourite oatmeal. When it's still hot, stir in one whisked egg. Blend it with Almond Milk or your favourite yogurt to the desired consistency. Submitted by J. Ashurst Cream of Wheat Cream of Wheat, made as usual, blended with a bit of brown sugar and Almond Milk (yum ... hits the spot) Submitted by J. Ashurst Chicken Soup Make, or have someone else make a healthy chicken soup with lots of veggies. Blend and sip slowly. Add more chicken broth if necessary to thin it for drinking. Submitted by J. Ashurst Michelle's Lentil Cream Soup Ingredients 3 carrots chopped 2 stalks celery chopped 1 sweet onion chopped 2 cloves of garlic 750 ml of chicken broth 1/2 to 1 cup of dried red lentils (you could use white beans also) Procedure Soften vegetables in small amount of olive oil, add garlic broth and lentils. Simmer until lentils are totally soft. Blend in small batches and return to pan. Add a little herb or plain cream cheese for viscosity if desired. Makes about 4 - 5 servings. Submitted by M. Glassel Hard-boiled eggs with some butter, and salt and pepper. (You don’t have to chew them at all and it feels like you are eating "real" food!) Submitted by M. Glassel Quick Turkey/Ground Beef Chili Ingredients 1 1/2 teaspoons olive oil 1 pound ground turkey or ground beef 1 onion, chopped 2 cups water 1 (28 ounce) can canned crushed tomatoes 1 (16 ounce) can canned kidney beans (drained, rinsed, and mashed) 1 tablespoon garlic, minced 2 tablespoons chili powder 1/2 teaspoon paprika 1/2 teaspoon dried oregano 1/2 teaspoon ground cayenne pepper 1/2 teaspoon ground cumin 1/2 teaspoon salt 1/2 teaspoon ground black pepper Procedure Heat the oil in a large pot over medium heat. Place turkey/ground beef in the pot, and cook until evenly brown. Stir in onion, and cook until tender. Pour water into the pot. Mix in tomatoes, kidney beans, and garlic. Season chili powder, paprika, oregano, cayenne pepper, cumin, salt, and pepper. Bring to a boil. Reduce heat to low, cover, and simmer 30 minutes. (If necessary, put everything into a blender and add your favourite liquid to help thin it out.) Chili is a great savoury food when you get tired of smoothies. Submitted by K. Korinth Cream of Asparagus Soup Ingredients 1 lb. fresh asparagus spears 1 medium onion - diced 1 Tbsp butter 3 cups chicken stock 1 medium potato - peeled and diced (you can also shred it with a cheese grater) 1 rib celery -- chopped 1 sprig fresh thyme or 1 tsp. dried thyme 1 cup cream (or milk) Salt and freshly ground white pepper to taste Procedure Soak and rinse asparagus. Remove top 1 inch of each spear, discard tough lower part, reserving middle portion of stalks. In a 3-quart saucepan over medium heat, sauté onion in butter for 3 to 5 minutes or until translucent. Add chicken stock, asparagus tips and stems, potato, celery, thyme, and pepper. Cover and bring to a boil. Reduce heat to low and simmer for 12 to 15 minutes or until vegetables are soft. Remove from heat and let cool. Remove asparagus tips and set aside. Place half of the soup at a time in a blender container. Cover and blend at high speed for 20 to 30 seconds or until very smooth. Pass through a fine sieve and return blended soup to saucepan. Add reserved asparagus tips and cream (or half and half, or milk) and heat thoroughly, or refrigerate to be served cold. Serves 4 Note: Half & half or milk may be substituted for the cream if fat content is a concern, although it won't taste quite as good. Be sure to adjust the seasoning after you add the cream (or half & half, or milk), especially if you plan to serve it cold. Fruit and Bran Milk Ingredients ½ orange ½ apple ¼ cup plain yogurt ¼ cup bran flakes 2 tablespoons of wheat germs Procedure Take a blender, combine all ingredients into it and blend until you get a smooth mixture. You can add fruit of your own choice too. This is an easy to make drink - perfect as a breakfast drink. A smoothie with body. Chicken Broccoli Soup Ingredients 1 cup chicken broth ½ cup of cooked broccoli 1 teaspoon of flour 1 tablespoon of sour cream or fresh yogurt Procedure Take a saucepan and pour the sour cream or yogurt into it. Add flour into it and stir the mixture until it forms a smooth texture. Later, add cooked broccoli and chicken broth into it and cook thoroughly. Add salt and pepper to taste. Chicken Delight Ingredients ½ chicken breast ½ cup chicken broth 1 medium potato 1 cup carrot cubes Procedure Cook potato and carrot (separately) until tender. Cook the chicken breast until tender as well. Take a blender and add cooked carrot, potato and chicken breast to it. Add the chicken broth into it and blend finely. Adjust chicken broth to achieve the desired consistency. Add salt and pepper to taste. Submitted by R. Lidstone Pie in a Glass For all of you sipping on smoothies for the holidays, this is a good alternative to pumpkin pie: Ingredients 2-3 heaping tablespoons of pumpkin pie filling (more or less depending on your taste) 2 scoops of vanilla protein powder 1-2 graham crackers Milk and ice –enough to get the consistency that you prefer Procedure Blend all ingredients until smooth and enjoy! You may also substitute ice cream for the protein powder for a holiday treat. S ubm it t ed b y R ac he l Chocolate Zucchini Cake: Incredibly moist, and very, very soft. Delicious with a side of ice cream! Ingredients 3 eggs 1 cup packed brown sugar 2 cups shredded, unpeeled zucchini 3/4 cup sour cream (or light ricotta cheese) 1/2 cup vegetable oil 2 cups flour 1/3 cup unsweetened cocoa 1 ½ tsp baking powder 1 tsp baking soda 1 tsp salt 1 tsp cinnamon Procedure In a large bowl, beat eggs and sugar. Add zucchini, sour cream, oil, and vanilla. Mix well. Mix or sift flour, cocoa, baking powder, baking soda, salt and cinnamon together. Mix into zucchini batter. Pour batter into greased and lightly floured 13 x 9 inch cake pan or use 2 round cake pans for a layered cake. Bake at 350 F for 25 -35 minutes or until tester inserted in centre comes out clean. Let cool and ice it with your favourite icing! S ubm it t ed b y M . L i ds t on e T I P S F O R J AW S U R G E RY R E C O V E RY The first week after surgery, you may feel congested and have nose bleeds. You may also have a sore throat from the intubation. Here are some tips you can use to help you get through these uncomfortable times: 1. To ease congestion, take a shower and bring your nose spray with you. Allow the steam to open your pores and nasal passages. Use the nose spray while you're in the shower. If you feel light-headed, sit down in the shower and let the steam do its magic. This should help relieve the discomfort in your nose. 2. To ease a sore throat, make hot lemonade. Use fresh lemons and heat water to desired warm temperature. Add a dash of honey. Drink slowly. This should help soothe your throat. Watering down thick liquid medications will also help them down easier while your throat is sore. 3. To ease swelling, try using a heating pad as opposed to ice. Whereas ice is good for dealing with immediate swelling for the first day or two, applying heat to your face is good for dealing with chronic swelling over the long term. Heat will open blood vessels to aide in the reduction of longer-term swelling and discolouration. M U S T- H AV E S F O R A B L E N D E D D I E T Before having jaw surgery, you'll want to stock up on some supplies that should help speed your recovery. This list is not comprehensive, but it should give you a good start for your shopping trip: Kitchen Utensils - Hand blender - regular (or traditional) blender - baby spoon - napkins and paper towels - Tupperware containers with lids - syringe tube or straws (ask your Doctor about their preferred method for eating) - freezer bags Bathroom Essentials - child-size toothbrush - mild mouthwash - dental wax (in case you have sharp wires) - lip balm (try to get a roll-on or squeeze dispenser) Vaseline Lip Therapy is great - facial cleanser wipes - facial moisturizer - nose spray (take to the hospital) Bare Necessities - Ensure (get at least 2-3 cases; vanilla and chocolate are great for making smoothies) - bags of frozen fruit (strawberries, pineapple, mango, and peaches), also keep bananas (in the freezer) for better smoothie consistency - Cream of Wheat and/or oatmeal - ingredients for making chicken soup - potatoes (sweet potatoes are great too) - pudding and/or ice cream - plain or vanilla yogurt - applesauce (the cinnamon kind is great with yogurt) - milk - peanut butter - chocolate-chip cookie mix - chocolate powder - protein powder (vanilla and chocolate are good staples) - sports drinks - frozen spinach - orange juice/frozen concentrate - chicken/beef stock (used a lot for thinning blends) - jello It is important to keep your diet interesting. Milk and ice cream based drinks seem ok at first, but over the long haul you will want to add chicken or beef stock as liquid thinners. If you are blending a salad, add V-8 or tomato juice to add a little pizzazz and to thin it for drinking. It tastes like a thick V8 smoothie and it’s full of vitamins. Start eating regular foods as soon as possible by cutting up your food into tiny bits. Use a knife and fork so you feel like you’re having a real meal!
