Stained Glass Window Biscuits Ingredients About 10 boiled sweets 115g unsalted butter, softened 55g caster sugar 175g plain flour 2 tsp mixed spice 1 tbsp semi skimmed milk Instructions: 1. Preheat the oven to 180°C/fan 160°C/Gas 4. Line 2 baking trays with greaseproof paper. Put the sweets into a freezer bag, and crush them up using a rolling pin. 2. In a large bowl, beat the butter and sugar together until it’s pale and creamy. Add in the flour, mixed spice, milk and mix together. Using your hands, bring the dough into a big ball. 3. Split the dough into four equal pieces. On a light floured surface, roll out each piece until about 5mm thick. Cut out shapes of your choice (about 8 cm in diameter) and place them onto the baking trays. If planning to hang the, use a skewer to make a little hole in each of them. 4. Cut smaller shapes (about 2cm) in the middle of each of the biscuits. Then divide the broken sweets between them in the cut out shapes. Bake for about 15 minutes or until a light golden colour. 5. Leave the biscuits in the trays to harden, then cool on a wire rack. Again if hanging, thread some ribbon through the holes.
