SOUTHERN BUTTERMILK BISCUITS Printed from COOKS.COM 2 1/4 c. flour 1/2 tsp. salt 1 tbsp. baking powder 1/2 tsp. baking soda 5 tbsp. vegetable shortening or butter 1 c. buttermilk Melted butter; optional 1. Preheat oven to 450 degrees. Butter a large baking sheet. 2. Sift 2 cups of the flour with the dry ingredients into a shallow mixing bowl. Cut in the shortening with a pastry blender until mixture resembles cornmeal. 3. Make a well in the center, pour in the buttermilk all at once, and stir quickly with a rubber spatula until a dough is formed. If it seems very sticky, add the remaining flour. 4. Turn dough out on a floured surface and knead lightly for a dozen strokes. Pat out 1/2 inch thick. 5. Tear apart golf ball size pieces and pat into the shape of a hockey puck. You can also roll out the dough ½” thick and cut with a floured 2 inch biscuit cutter or glass. Place on baking sheet. If desired, brush biscuits with melted butter. Bake about 12 minutes. Serve immediately. Makes 10-12 biscuits. BIG DADDY BISCUITS 2 cups all-purpose flour 1 tablespoon baking powder 1 teaspoon salt 1 tablespoon white sugar 1/3 cup shortening 1 cup milk 1. Heat oven to 425°. Adjust oven rack to center position. 2. In a large bowl, whisk together the flour, baking powder, salt, and sugar. 3. Cut in the shortening until the mixture resembles coarse meal. 4. Gradually stir in milk until dough pulls away from the side of the bowl. Knead 15 to 20 times. 5. Roll out and cut biscuits from dough or pull off pieces and make biscuits in your hand. Repeat until all dough is used. Brush off the excess flour, and place biscuits onto an ungreased baking sheet. 6. Bake12 to15 minutes in the preheated oven, or until edges begin to brown. CHEDDAR BISCUITS 4 ounces butter, room temperature (1/2 cup) 1 cup shredded sharp Cheddar cheese 1 cup sour cream 1/2 teaspoon dried leaf parsley 1/4 teaspoon dried leaf thyme 2 cups all-purpose flour 2 teaspoons baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 1. Heat oven to 350°. Adjust oven rack to center position. 2. In a mixing bowl, combine the 1/2 cup of butter, shredded cheese, sour cream, and herbs. 3. In another bowl, combine the flour with baking powder, baking soda, and salt. 4. Stir the dry ingredients into the first mixture just until blended. 5. Spoon the dough into the muffin cups or pull off golf ball size pieces and make biscuits in your hand. 6. Place on greased cookie sheet and bake for 16-20 minutes. CINNAMON BISCUITS Use the recipe for BIG DADDY BISCUITS. Other Ingredients: 1 stick butter ½ c. sugar ½ c. brown sugar 1 t. cinnamon 1. Roll out the dough into a square about ½” to ¼” thick. 2. Melt butter and coat dough with butter. 3. Mix both sugars and cinnamon and spread over dough. 4. Roll dough into a log. 5. Cut dough into 1” thick pieces perpendicular to the log. 6. Place pieces into a 9 X 13 baking pan with edges touching. 7. Bake 10-12 minutes in pre-heated 400 degree oven. 8. Ice with a mixture of ½ c. powdered sugar and 3 t. milk and 1 t. vanilla.
